1. Remove and discard the leaves. Wash the stalks and remove the knobbly ends. Chop into pieces, about 1.5–2 cm/ 0.6-08-inches thick. Place in a large pot and add the sugar. Let stand until some liquid is released, about 20-30 minutes.
2. Bring to a boil, stirring often. As soon as it boils turn off the heat. If you cook it for longer the pieces will break. Pack immediately into sterilized and still hot jars, leaving about 3 cm/ ½-inch headspace. Make sure that each jar contains roughly equal amounts of rhubarb and liquid. Wipe the rims of the jars with kitchen paper. Be thorough, otherwise, the jars will get moldy. Put the lids on.
3. Process in a water bath for about 15 minutes, adjusting for altitude. If you have a canner, use that according to its instructions.
4. Place a folded clean kitchen towel on the bottom of a very large pot. Place the jars in there making sure that they don't touch each other. Fill with boiling water, covering by at least 5 cm/ 2 inches.

1. Rinse and pat dry rhubarb stalks. Chop into 1 inch pieces. Place into a large bowl and sprinkle 1 cup sugar onto chopped rhubarb. Stir until well combined. Cover the bowl with a tea towel and allow to sit for 4 hours.
2. The sugar will pull out the juices from the rhubarb stalks, creating a lovely rhubarb syrup.
3. Wash 4 pints in warm soapy water and rinse. Fill water bath canner with water and begin to heat. Fill a kettle with a few cups of water and bring to a boil.
4. Dump rhubarb and syrup into a large pot. Bring to a boil and boil for 30 seconds, stirring. Take off of heat and ladle 2 cups of rhubarb into each pint jar with a generous 1/2 inch head space. Pour syrup over rhubarb, dividing it evenly between the four jars to a 1/2 inch head space. Remove air bubbles by running a spatula or knife around the outside of the jar and add more syrup if needed. If you run short on syrup, add boiling water (hence the kettle boiling). Wipe rim of jar clean, put lids on, and screw down bands.

2. Stirring regularly, cook the fruit at a low simmer for 35 to 45 minutes, until it no longer looks watery and it sits up high in the bowl of a spoon. If the butter is making a splashy mess, use a splatter shield to control the mess.
3. When the butter has reduced to about half its original volume, taste it. If desired, add additional sugar (I rarely add it to mine, but I do like my preserves to be a little tart).
4. If any whole pieces of rhubarb remain, press them into the butter using the back of your spoon.
