Homemade Cola Recipe Tasting Table

Directions. 1. Make the caramel syrup: In a small saucepan, bring the sugar, water, allspice and cinnamon to a boil over high heat, stirring occasionally to dissolve the sugar.

Servings: 2
Estimated Reading Time: 4 mins
1. Make the caramel syrup: In a small saucepan, bring the sugar, water, allspice and cinnamon to a boil over high heat, stirring occasionally to dissolve the sugar. Reduce the heat to medium and continue to cook, stirring occasionally, until the mixture reaches 380°, 12 to 14 minutes. At this point it will turn deep brown quickly, so keep an eye on it, swirling the pan often, until the mixture is deep brown, 1 to 2 minutes longer. Turn off the heat and immediately add the boiling water to prevent the syrup from solidifying. Set aside.
2. Make the cola: In a small saucepan, bring the kola nuts and water to a simmer over medium-high heat. Reduce heat to medium and simmer for 15 minutes.
3. Meanwhile, in a medium bowl, use your fingers to rub the lime zest into 2 tablespoons of the sugar to extract the oils from the citrus zest. Add the lime-sugar mixture to the kola nuts along with the cooled caramel syrup, lime juice, citric acid, vanilla and the remaining sugar, stirring until sugar is dissolved.
4. Simmer another 10 minutes, take off the heat and cool completely. Line a sieve with a doubled layer of cheesecloth and set over an airtight container, then strain the cooled cola mixture through the cheesecloth. Refrigerate for up to a month. To serve, mix 1/4 cup (2 ounces) of the cola with the soda water.

Steps: 3
1. Sprinkle the pork on all sides with the garlic powder and plenty of salt and pepper.
2. Heat the pork fat over medium-high heat in a small, heavy Dutch oven or braiser (see Cook's Note). Add the pork and fry on all sides until well browned, about 20 minutes. Add the Coca-Cola and 1/2 cup water (there should be just enough liquid to cover the sides of the meat). Bring to a boil and reduce to a simmer. Add the tarragon, bay leaves and thyme. Cover and simmer until the pork is tender, about 1 1/2 hours; the Coca-Cola will caramelize and the liquid will evaporate completely.
3. Transfer the pork to a cutting board and shred. Serve with warm corn tortillas (charred over a flame) and toppings on the side: salsa verde, diced onions, cilantro, radishes, lime wedges and avocado.

1. Mix the essential oils and 3 mL (0.61 tsp) of water in a small bowl. Measure 3.5 mL (0.71 tsp) of orange oil, 1 mL (0.20 tsp) of lemon oil, 1 mL (0.20 tsp) of nutmeg oil, 1.25 mL (0.25 tsp) of cassia oil, 0.25 mL (0.051 tsp) of coriander oil, 0.25 mL (0.051 tsp) of neroli oil, 2.75 mL (0.56 tsp) of lime oil, and 0.25 mL (0.051 tsp) of lavender oil into a bowl. Use a spoon to mix the oils and water until they are thoroughly combined. This mixture makes the flavouring for the cola. If you find it difficult to source neroli oil, use petitgrain, bergamot, or bitter orange oil instead. Cassia oil is also called cinnamon oil. If possible, use pure essential oils, as these will have a superior taste. Purchase essential oils from a health store or online.
2. Add sugar, water, citric acid, caffeine, caramel colour, and flavouring to a blender. Measure 15 mL (0.53 imp fl oz; 0.51 fl oz) of the flavouring you created, 17.5 ml (3.5 tsp) of 75% citric acid or phosphoric acid, 2.28 L (9.6 c) of water, 2.36 kg (5.2 lb) of granulated white sugar, 0.5 mL (0.10 tsp) of caffeine (optional), and 30 mL (6.1 tsp) caramel color (optional) into a blender. If you don’t have a blender, use a food processor instead. Don’t add extra caffeine to the recipe, as high doses can make you unwell. Caramel coloring doesn’t affect the flavour of the cola, it simply gives the colour a pale brown colour. Purchase caramel coloring and caffeine from a speciality foods store. Store any unused flavoring in an airtight container in the fridge.
3. Measure 10 g (0.35 oz) of food-grade gum arabic into the blender. The gum arabic acts as a thickener and helps to give the mixture a syrup consistency. Make sure to use food-grade gum arabic rather than art-grade gum, as the latter will make you sick. Purchase gum arabic from a speciality foods store.
4. Blend the ingredients for 2 minutes. Turn the blender to the highest setting and blend the ingredients until the sugar is thoroughly dispersed amongst the liquids. This mixture creates the syrup base for the OpenCola. If you want to keep the syrup to use at a later date, place it in an airtight bottle or container in the fridge.

1. Place the gammon into the slow cooker fat and skin side up with the string intact (to ensure it remains rolled up). Arrange the roughly chopped onion, carrot and celery around the gammon joint. Put in the bay leaves and sprinkle over the ground black pepper.
2. Pour over the cola so it covers the meat entirely. Cook on low for 8 hours or 4 on high.
3. Check that the meat is cooked through. You can do this by:1. Checking that the skin and fat are receding from the edge of the joint2. Piece the meat with a skewer, the meat should look light pink and slightly flaky. The skewer should be able to pierce through to the middle of the joint with little resistance.3. Insert a meat thermometer to the centre of the joint, it will read upwards of 160°F or 71°C.
4. Remove the gammon from the pot and discard the cooking stock. Then remove the skin to leave just the layer of fat on the outside of the meat. Place the joint in a roasting tin fat side up.
