Corn is the summer classic, but asparagus, eggplant, bell peppers, zucchini, onions, mushrooms, and tomatoes are also great when grilled to perfection. When grilling multiple vegetables at the same time, it’s important that they all have similar cooking times.
1. Carrots with Spiced Yogurt Toss 8 bunches (2 1/2 pounds, trimmed) baby carrots with 2 tablespoons olive oil, 3 sliced shallots, 1 teaspoon chopped thyme, and salt and pepper. Roast at 425 degrees F, 20 minutes. Stir 1/4 cup Greek yogurt with 1 tablespoon each honey and olive oil; season with cayenne and salt.
Soft Vegetables (Broccoli, Tomatoes, Greens, etc.): About 10 minutes is good. Don't marinate these for longer than 30 minutes because they will release water and get soggy. When marinating with other vegetables, add soft veggies last after the harder veggies have already soaked for a while.
Any vegetables can be done on the grill. Larger ones can be cut into smaller pieces. Zucchini, corn, green beans, asparagus, tomato (firm ones), onion, garlic (whole cloves), potato, squash, peppers, broccoli, cauliflower, carrots, beets, turnips are all good candidates.
