1. The morning before you want to enjoy your English muffins, prepare your dough: In a large measuring cup or medium bowl, whisk together starter, water, honey and oil.
2. Select a container or bowl that will hold at least 3 quarts, as this dough will grow 3 to 4 times in size. Add the flour and salt to it, making a well in the center. Pour the liquid mixture into the well and stir with your hands, clawing the mixture and flipping it occasionally until no flour streaks remain, and you are left with a dense, shaggy, wet ball. Scrape the bowl as needed to integrate sneaky flour pockets.
3. Cover loosely with a lid or inverted plate. Tuck in a warm, draft-free place and allow it to nearly quadruple in volume over the next 8 to 12 hours.
4. Dust a work surface heavily with flour. Prepare a large baking sheet by coating it with a light dusting of polenta, followed by a dusting of flour.

1. Combine the starter, water, milk and 2 cups of the flour in the bowl of a stand mixer or a large mixing bowl. Mix on low speed until combined. Cover the bowl and set aside for 30 minutes.
2. Add the honey, oil and salt and mix to combine. Switch to the dough hook if using a stand mixer. Add the remaining flour and knead until the dough clears the sides of the bowl and clings to the hook. Knead the dough for 2-3 minutes. If mixing by hand, add flour until you can no longer stir, then turn the dough out onto a floured surface to finish by hand.
3. Transfer the dough to a lightly oiled bow, turning once to coat the dough. Cover the bowl and set it aside at room temperature. After 30 minutes uncover the bowl, lift one side of the dough over into the middle of the dough. Repeat with the other three sides of the dough then flip the dough over. Cove the bowl and after 30 minutes repeat the procedure. Cover the bowl and after 60 minutes repeat the procedure. Cover the bowl and after 60 minutes repeat the procedure one last time. By now the dough should be lively, elastic and airy. If the dough is still sluggish give it another hour or two at room temperature.
4. Turn the dough from the bowl and knead briefly to form a smooth ball. Lightly sprinkle your work surface with cornmeal. Roll the dough to 3/8” thick. Cut muffins with a 3” biscuit cutter. Reroll the scraps and continue cutting until all the dough is used. You should get about 16 muffins. Place the muffins on an ungreased baking sheet. Cover the pan and let the muffins rise until almost doubled in volume, about 1 hour.

1. In a large glass bowl, mix together all of the ingredients, including your sourdough starter and bring it together to form a dough. The dough will be quite sticky. Gently knead the dough to bring it together. It's easy to do by hand in the bowl for less washing up, but if you prefer to do it in a stand mixer that's perfectly fine too.
2. Once you have a dough formed, cover it in plastic wrap and set aside for around 12 hours to ferment at room temperature (see notes). You want the dough to rise (it doesn't need to double though). It should rise at least half in the bowl and become a smoother, structured dough (see the pics above of my dough). It's important that the dough maintains its gluten structure in order to be shaped into rounds.Just like traditional sourdough bread, you'll need to watch the dough, rather than the clock.
3. Once you're happy with the dough, you can wet your hands and gently shape your dough into a rough ball by performing a set of stretch and folds. This will deflate the dough - but don't worry. Now leave the dough to rest for around 30 minutes.
4. Dust your work surface with corn meal and then ease the dough out of the bowl. Sprinkle corn meal on the top of the dough too. Depending on how sticky your dough is, you might need to add some extra as you go along so keep it handy.

1. Make sure your starter is active by checking if it has doubled and if it's bubbly. Perform the floating test to be sure. Add a teaspoon of the starter into a glass full with cold water: if it floats, it’s ready.
2. In a large bowl, combine all the ingredients.
3. Mix and knead lightly for about 2 minutes until the dough is formed, with all the ingredients well combined and no dry spots remain visible. Use a stand mixer or your hands to do it.
4. Cover the dough with plastic or beeswax wrap and let it rest at room temperature for 2 hours. Store inside the fridge after that time, for 10 to 14 hours. You dough should almost double and pass the windowpane test.

2. In a large bowl, combine your active sourdough starter with only 2 cups of the flour and water (reserve the remaining cup of flour for the morning). What you have created is called a poolish or levain. Cover the bowl with plastic wrap and allow it to sit on the counter overnight (or 7-10 hours).
