Directions In a large soup pot over medium heat, heat the olive oil. Add the spices and stir well. Stir in the beans, tomatoes with their juices and the chicken broth. Bring soup up to a simmer and allow it to simmer for about 20 minutes, uncovered.
Directions Wash the beans and place in a Dutch oven. Cover with water and soak overnight. Drain the beans and add the water, ham hock, salt and pepper. Cover and bring to a boil. Reduce heat and simmer 1 1/2 hours until beans are tender. Add the remaining ingredients. Simmer 30 minutes more, stirring occasionally. Remove ham hock from the soup.
Instructions Soak the beans for at least 8 hours & up to 24 hours. After they have soaked, drain them & give them a good rinse. In a large stockpot, saute the onions & peppers until tender. Add in the 6 cups of water, the ham bone, & the beans to a boil. Stir in the tomato sauce, tomato paste, green chiles, & spices (including the bay leaves).
Add enough water or water and broth to cover the beans by about 2 inches. (about 6 - 8 cups) add the goya ham concentrate if using. Cover and cook on high for the first hour then turn the crock pot to low and cook for an additional 4 hours or until the beans are tender and a bit creamy.
