1. Preheat the oven to 375 degrees F.
2. To make the pastry, make a well in the flour, and place egg, yolks, sugar, butter and olive oil mixture in the center and proceed as you would with fresh pasta, i.e. bring flour in bit by bit until the liquid in the well is thick enough to bring together with your hands. Knead until the dough is smooth, then allow to rest 10 minutes.
3. Meanwhile, make the filling by mixing together the cream cheese, pine nuts, sugar, lemon zest, juice and eggs in a bowl until creamy.
4. To assemble, roll out the pastry to form 2 (12-inch) circles. Place one circle down to line the bottom and sides of a 9-inch pan. Spread the ricotta mixture evenly over this layer. Place the remaining circle of dough over the top and pinch together the edges. Place in the oven to bake for 35 to 40 minutes. Remove and serve warm or at room temperature with vin Santo from Cappezzana.

1. Make the pastry: Process the butter and flour in a food processor until you have a mixture the consistency of grainy sand. (If you don't have a food processor, rub the butter into the flour with your thumb and forefinger in a bowl.) Remove the blade, then sift the confectioners' sugar in with the flour and butter. Add the egg yolks, and use your hands to bring the dough together. If it feels too dry and crumbly, add 1 to 2 tablespoons cold water. Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Preheat the oven to 400˚F.
3. On a lightly floured work surface, roll out the dough using a rolling pin into a large disk that is roughly ⅛ inch (3 to 5 mm) thick. Gently lift the dough using the rolling pin and lay it into a 10-inch (27 cm) tart pan. Gently press it down into the nooks and crannies, then roll over the top of the pan with the rolling pin to cut away excess pastry. Prick the bottom of the tart all over with a fork. Cover the pastry with parchment paper and fill with baking beans or weights.
4. Bake for 15 minutes, or until dry to the touch, then remove the parchment paper and weights, put the tart shell back in the oven, and bake for 5 to 7 minutes more, or until the pastry is lightly golden. Remove and let cool briefly. Reduce the oven temperature to 350˚F.

1. In a food processor, combine the flour, sugar, baking powder, lemon zest and salt. Add the butter in clumps and pulse until the mixture resembles coarse meal. Add the whole eggs and egg yolks and pulse a few times, until the dough just comes together. Turn the pastry dough out onto a lightly floured work surface and knead it 2 or 3 times, just until it comes together. Divide the pastry dough into 2 pieces, 1 slightly smaller than the other. Pat the pastry dough into disks, wrap each disk in plastic and refrigerate for at least 30 minutes.
2. In a medium saucepan, heat the milk with 1/4 cup of the sugar, the vanilla bean and vanilla seeds and the lemon zest until the mixture is hot to the touch. In another medium bowl, whisk the egg yolks with the remaining 1/4 cup of sugar until blended. Stir in the flour until incorporated. Whisk in the hot milk in a thin stream.
3. Set a fine-mesh strainer over a medium bowl. Pour the pastry cream mixture back into the saucepan and cook over moderate heat, whisking, until thick and bubbling, about 2 minutes. Immediately strain the pastry cream into the bowl, scraping the strainer with a rubber spatula. Press a sheet of plastic wrap directly onto the surface of the pastry cream and refrigerate until chilled, 1 to 2 hours.
4. Preheat the oven to 350°. Butter and flour a 10-inch fluted tart pan with a removable bottom. On a lightly floured work surface, roll out the larger disk of pastry to an 1/8-inch-thick round. Ease the pastry into the tart pan, pressing the dough into the corners. Don't trim the overhang.

Frequently Asked Questions

Where can you find Torta della nonna cake?

Torta della Nonna is a traditional Roman and Tuscan dessert to be found in most Italian bakeries. Rome, the eternal city, produces one version and Naples, the city for the sweet toothed on the Italian mainland, the other. The cake is delicious, similar to the Pastiera Napoletana and is made at Easter.

How do you make Nonna's sponge cake at home?

Separate the eggs. Place the yolks in a large mixing bowl and the whites in the bowl of your stand mixer. Add sugar and vegetable oil and whisk with the egg yolks until you have a smooth, pale yellow mixture that forms ribbons when you lift the whisk. Add the lemon zest and lemon juice and combine.

What kind of cheese is in Nonna cake?

"Grandmother's cake" is a traditional Tuscan dessert, though everyone's nonna makes it slightly differently. In his version, Joe Sponzo combines a delicate pastry crust with a silky pastry cream, which he flavors with vanilla and lemon zest (other Tuscan cooks add ricotta cheese).

What kind of pastry do you use for Torta Nonna?

Pastry cream on a base of shortcrust pastry, covered with pine nuts, almonds and powdered sugar.
