This rich and flavorful AIP "nomato" sauce is so good you wont even miss the tomatoes! Heat the avocado oil in a deep pan or stock pot over medium heat. Begin chopping the onion and garlic. Add the onion to the pan and allow to cook down and begin to caramelize then add the garlic and cook at a slightly lower heat.
Cook for 1 minute and immediately remove the tomatoes to an ice water bath. Once the tomatoes are cool enough to handle, slice the skin with a sharp knife and it will peel right off. Set aside until it is time to add them to the pot. Turn the Instant Pot on the Saute Mode. Adjust your settings to the MORE to get your pot heated up quickly.
It’s AIP compliant, as well as Whole30, Paleo, and sugar-free. Add the olive oil to the base of the instant pot and set to saute. Saute the onions and garlic for 2 minutes, before adding in the carrots, beets and celery. Saute for 5 minutes, stirring frequently.
