Rating: 4.9/5(68)

1. Preheat oven to 400°F (204°C). There are options for the baking pan. Line a baking sheet with parchment paper or a silicone baking mat, use a seasoned 10-12 inch cast iron skillet, or grease a 9-10 inch cake pan or pie dish. Set aside. Feel free to pre-heat the skillet in the oven too, though that’s not necessary.
2. Whisk the flour, salt, and baking soda together in a large bowl. Set aside.
3. Whisk the melted butter and honey/sugar together. Pour into the flour mixture and toss to combine. (The mixture won’t fully combine yet since there’s so little wet ingredients and so much flour.) In 2-3 additions, pour in the buttermilk mixing for 15-20 seconds after each addition. After all of the buttermilk has been added, mix gently to form a shaggy, stiff, and slightly moist dough. If you used honey, there could be little specks of honey/butter in spots. That’s ok! Those will be extra flavorful specks in your bread.
4. Pour the shaggy dough and any flour crumbles that haven’t been incorporated onto a lightly floured work surface. With floured hands, work the dough into a ball and flatten into a (approximately) 7-8 inch disc as best you can (make it about 2 inches tall). If the dough is too sticky, add a little more flour.

1. In a mixing bowl, mix together flour, salt, sugar, baking soda, and baking powder. If you’d desired, stir in Parmesan and rosemary. Whisk egg on the side of the bowl and combine with softened butter. It will be crumbly at first. Then quickly stir in buttermilk, mixing just enough to form a homogeneous dough.
2. Transfer to a lightly floured surface and quickly knead for 5 to 8 times maximum. Shape into a flat round or oval shape! Score an X on the top center (about ¼-inch deep if baking or 1/3-inch deep if cooking bread in the slow cooker). Transfer right away to either a baking sheet or cast iron skillet lined with parchment paper, or to a lined slow cooker.
3. IF COOKING IN THE CROCKPOT: Brush bread with buttermilk and cook on high for 2 ½ hours, or until a toothpick inserted in the center comes out clean. For a browned crust, brush crockpot bread with olive oil or melted butter and then broil bread on the middle rack of the oven on top of a lined baking sheet for 3-5 minutes or until lightly brown.
4. IF BAKING: Bake in a preheated oven at 375 degrees F (190 degrees C) for about 45 minutes, or until a toothpick inserted in the center comes out clean and the top has browned. For a moist and softer crust, brush bread with extra buttermilk before baking and also every 20 minutes while baking.

1. Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper. Set aside.
2. In a large bowl, whisk together flour, sugar, baking soda, and salt. Add the butter into the flour mixture and mix it with your fingers (or a fork/spatula) until butter is evenly distributed. Add buttermilk and mix until a shaggy, slightly moist dough forms. If dough is too crumbly, add more buttermilk as needed (you’ll need no more than 1-2 tablespoons). Don’t overmix.
3. Transfer dough to a floured surface and knead gently just for a few seconds until a ball forms and it’s cohesive but still lumpy - it shouldn’t look pretty or smooth. You don’t want to overwork the dough, as this can make it tough.
4. Form dough into a 7-inch round loaf and transfer to prepared pan. Score a deep “X” into the top of the dough. Sprinkle with oatmeal if you like. Bake for 40-45 minutes (If you have a thermometer, the internal temperature should be around 180°F). Transfer to a wire rack and allow to cool to room temperature. Serve warm or at room temperature.

2. In a large mixing bowl whisk together the flour, baking powder, salt, and any other spices and herbs you might be using.
3. In a separate mixing bowl, whisk together the eggs, milk, oil, sugar (if making sweet quick bread), and any other extracts or liquids you may be using.
4. Pour the liquid ingredients into the dry ingredients and using a spoon or a rubber spatula, stir the two together until combined. This will be a batter, not a dough. For the sweet quick bread, only stir until the flour is absorbed and then stop. The more you stir the more more tough the bread can become. For the savory quick bread, it could benefit you to give it a good stir for about a minute to purposefully develop some of the gluten strands so that it has more of a bread-like texture to it once baked.
