1. In a large bowl add in the flour, yeast, granulated onion and 2 Tbl of dried onions, and salt. You need to make sure the bowl is at least 2 times the size as this will easily double in volume. Whisk to combine. Add in the water and mix with a wooden spoon – do NOT use a stand mixer. Mix it until it’s combined and forms a ‘shaggy’ dough. Just make sure that all the flour is incorporated. It will not be a smooth dough – that’s how it’s supposed to be.
2. Cover with plastic wrap and set in a warm place overnight for at least 12 hours but no more than 24.
3. When you’re ready to bake, preheat your oven. Put the rack in the middle and preheat to 450F. Let this heat up for about 45 minutes.
4. Mix the remaining 2 tsp of dried, minced onions with 2 tsp of hot water. Gently stir and set aside. Place the dough out a lightly floured board and gently shape it into a rectangle ~12×8”. Fold one third over and the other third on top (like an envelope). Gently start to roll it with your hands into a log that’s ~12×4”. Pinch the seams together. For the ends just tuck them under and pinch to seal. *See note if you’re not using the Emile Henry Italian Loaf Bread Baker about shaping and baking in a Dutch oven.

1. In a large bowl, mix together the flour, yeast, and salt, onion and sage. Add the water and mix together with a wooden spoon until just combined. You will have a sticky, shaggy ball of dough. Cover the bowl with plastic wrap and let rise at room temperature for 12-18 hours, and do not disturb!
2. After rising, the dough will be very sticky! Carefully dump it onto a well floured surface. Stretch the dough and fold it into thirds. Then turn the dough 90° and stretch it out again, and fold it into thirds. Gently shape the lump into a loaf with the ends tucked under, then slash the top. Allow the dough to rest 15 minutes.
3. Place the loaf on a pre-heated cast iron skillet or dutch oven. Put into a pre-heated 500° oven, and throw a few ice cubes into the bottom of the oven if desired (this helps the loaf and crust form best). Bake 30 minutes. Allow to cool before slicing!

1. In a large bowl combine flour, yeast and salt. Add 1 1/2 cups/345 grams water and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.
2. Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself once or twice. Cover loosely with plastic wrap and let rest about 15 minutes.
3. Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a ball. Generously coat a cotton towel (not terry cloth) with flour, wheat bran or cornmeal; put dough seam side down on towel and dust with more flour, bran or cornmeal. Cover with another cotton towel and let rise for about 2 hours. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.
4. At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under towel and turn dough over into pot, seam side up; it may look like a mess, but that is OK. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is beautifully browned. Cool on a rack.

1. First thing to do when baking this bread? Decide on a timeframe. The dough is stirred together; rests for 10 hours; is put into a crock; rises for 2 hours, and bakes for 45 minutes. So that's just under 13 hours. It's a good weekend bread; stir it together Friday night at about 10 p.m.; scoop it into the crock about 8 a.m. Saturday; bake about 10 a.m., and your bread will be baked, cooled, and ready to slice by noon. ,
2. Be sure you have something to bake the bread in, namely a 4- to 4 1/2-quart round, deep covered crock, Dutch oven, or casserole dish. It must be oven-safe (obviously); it really does need a lid, and it has to be deep enough (about 4") to hold the rising dough.
3. To make the dough: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. Place all of the ingredients in a large mixing bowl. Stir to combine. At first the dough will stick to the spoon and follow it around the bowl. But once all the flour is completely absorbed (after about 10 seconds of vigorous stirring), the dough will become softer and stick to the sides of the bowl. That's it; you're done stirring.
4. Cover the bowl and set the dough aside to rest at cool room temperature for 10 to 12 hours. If it's very hot and humid, do your best to find a cooler spot; about 68°F to 70°F is ideal. After its rest, the dough should be very bubbly and will have risen quite a bit.

1. Stir together the flour, salt and yeast in a large mixing bowl until combined. Add in the warm water and stir with a wooden spoon or spatula until the dough is evenly mixed and no large flour streaks remain. (The dough will look quite loose and shaggy, which is ok.)
2. Cover the bowl with plastic wrap or beeswrap, and let the dough rest at room temperature for 12 to 18 hours.
3. Transfer the dough to a well-floured surface. Fold the dough on top of itself — pulling the outer edges up and into the center a few times until the dough feels a bit tighter and holds its shape — to form a round dough ball. (If the dough is sticky or feels too loose at any point, just keep sprinkling on extra flour as needed.) Lightly flour the top of the dough ball, and then carefully flip it upside-down onto a piece of parchment paper, so that the smooth side is on top. Use your hands to shape the ball into an even circle. Lightly flour the top of the dough ball, then loosely cover it with plastic wrap or beeswrap to rest while the oven heats.
4. Place the Dutch oven inside of your oven*, then set oven to 450°F. Wait for 20-30 minutes for the oven to heat, while the dough continues to rest. (If the dough rises and spreads out more than you would like during this time, just use your hands to shape it into a tighter ball once more just before baking.)

1. Mix the dry ingredients; bread flour, active dry yeast, and kosher salt, in a large mixing bowl.
2. Pour in 1 ⅓ cups (316 ml.) lukewarm water.
3. Give it a mix using a wooden spoon. At this point, the dough needs to be quite sticky. Stir in the chopped olives and ensure that they are equally distributed throughout the batter. (Alternatively, you can use your clean hands to mix and feel the stickiness.)
4. Cover the bowl with a clean kitchen towel and let it sit in a warmer part of your house for 18-24 hours. In my tests, I found that the bread baked after 18 hours of rising time was perfect, but the 24-hour one was also good. One important thing to mention here is that at the end of the rising time you might see a thin (kind of hard - for the lack of a better word) layer at the top of the dough. Don’t be alarmed by that. In the next step, we will fold that into the dough and since it is a sticky one, the additional rising time will help soften it.
