1. If you have a food processer you can chuck all the ingredients in. If using a high speed blender (nutribullet etc), pulse sunflower seeds and oats to a fine meal, chop dates into small pieces and mash with a fork and then mix all ingredients together in a bowl. Use your hands to mix all ingredients together to form a doughy mixture.
2. Press into a lined tray, sprinkle with extra desiccated coconut and pop in the freezer to firm up (about 15mins).
