1. Firstly, line a 8in (20cm) square tin with non-stick baking paper, make sure you have excess baking paper coming up over the sides of the tin to make it easier to lift out later.
2. Crush your gluten-free chocolate chip shortbread. I usually place mine in a sandwich bag and hit them with a rolling pin or pulse them in a food processor. You can make them quite small or have some chunkier bits.
3. Melt your butter in the microwave in short bursts, mixing in between.
4. Pour your melted butter into your crushed shortbread gradually and mix together, either in a large mixing bowl, or in the bowl of your food processor. Stop adding the melted butter if it starts to look wet, it should be just enough to coat the shortbread crumbs.

1. Line a baking tin with greaseproof paper. I use a 23cm square tin, although I have to create a little divider with tin foil (see pics below) as only 2/3 of the space is needed. So if you have a smaller tin (23cm x 16cm) feel free to use than instead.
2. Blitz the biscuits in a mini blender until you have a fine crumb. (You can also use the end of a rolling pin to break them up in a bowl if you don't have a mini blender, it just takes a bit longer.)
3. Melt the butter in the microwave and pour into a bowl with the biscuit crumbs. Mix until full combined. Tip the biscuit mix into the lined tin and spread across two thirds of the base, using a fork to press down and compact them. Create a little divider using tin foil to keep the edge in place (pics below), if you are using a square tin like me. Then transfer to the fridge to chill for 30 mins.
4. 5 mins before the end of chilling time, tip the Carnation caramel into a small saucepan. Bring to simmering point (using a low heat), then allow it to bubble for 5 minutes to thicken it slightly.

2. Add the chopped semisweet chocolate to a heatsafe mixing bowl set over a pan of simmering water. Add the coconut oil to the bowl with the chocolate and allow it to melt. Heat, stirring, until smooth, 2 to 3 minutes. Leave the mixture in the pan, over the water, until ready to use.
3. In a separate bowl, add the chopped chocolate candies and candy bars and mix to combine.

1. Preheat the oven to 350 degrees. Line a 9-inch square pan with aluminum foil, pushing the foil neatly into the corners and up the sides of the pan, using two pieces if necessary to ensure that the foil overlaps all edges (the overhang will help removal from the pan). Spray the foiled pan with nonstick cooking spray or grease with butter.
2. In the bowl of a food processor fitted with a metal blade, combine the flour, brown sugar, cornstarch and salt; process until well combined and no lumps of brown sugar remain. Add the butter and pulse until a coarse meal forms. Add the ice water and egg yolk and blend until moist clumps form. Dump the dough into the prepared pan and press with your fingers into an even layer (dust your fingers with flour if the dough is too sticky). Pierce the dough all over with a fork and bake until golden, about 20 minutes. Set aside to cool.
3. Whisk the sweetened condensed milk, brown sugar, butter, golden syrup, vanilla and salt together in a medium saucepan over medium heat until the sugar dissolves, the butter melts and the mixture comes to a boil. Attach a candy thermometer to the side of the pan and boil gently, whisking constantly, until the caramel is thick and the temperature registers 225 degrees F, about 6 minutes. Pour the caramel over the warm crust; cool for about 15 minutes, or until caramel is set.
4. Place the chocolate and cream in a microwave-safe bowl. Microwave in 20 second intervals, stirring in between, until the chocolate is about 75% melted. Stir, allowing the residual heat in the bowl to melt the remaining chocolate, until smooth (if necessary, place the chocolate back in the microwave for a few more; just be sure not to overheat or the mixture will curdle). Spread the chocolate over the caramel layer. Refrigerate the bars until the chocolate is set, at least 1 hour. Using the foil overhang, lift the bars out of the pan and transfer to a cutting board. Cut into small squares and store in the refrigerator until ready to serve.

2. In a small pan, roast the pumpkin seeds with a little bit of salt. You want them go get crunchy but not burned!
3. Melt about half of the chocolate in the microwave (or water bath. But generally I don't recommend this as the steam can easily mix with the chocolate which will ruin it). Once completely melted, add the rest of the chocolate and coconut oil and combine well making sure all the chocolate has melted. Pour over the date-caramel and sprinkle with sea salt flakes. Let it set in the fridge and then cut into squares.

Use a hand-held immersion blender to blend everything together into a caramel.
4. Spoon the caramel over the biscuit base and gently spread it across the tin so it's all an even height. Place these two layers in the fridge for about 30 minutes.
