Tasty no-bake cookies made with oatmeal, peanut butter and cocoa. Start timing when mixture reaches a full rolling boil; this is the trick to successful cookies. If you boil too long the cookies will be dry and crumbly. If you don't boil long enough, the cookies won't form properly. In a medium saucepan, combine sugar, milk, butter, and cocoa.
Stir in the maple extract, salt, peanut butter, and white chocolate chips into the hot mixture. Stir until the ingredients are fully incorporated. Stir in the oats.
Press half of the mixture onto the bottom of prepared pan. Bake until just set and starting to brown around the edges (about 20 minutes). Cool in pan on wire rack for 5 minutes.
