1. Line an 8 x 4 inch baking loaf pan with parchment paper.
2. In a medium bowl, mash bananas with a fork or spoon until it becomes puree consistency. Stir in coconut flour until evenly mixed. Your mixture should thicken and resemble a cookie dough consistency. You can taste and adjust as needed. If you find your mixture is too wet, you can add a little extra coconut flour.
3. Spread mixture into prepared baking pan, using a spatula to smooth out the surface. Wrap cake loaf pan with plastic wrap. This will prevent the bananas from oxidizing too much and turning the cake brown or gray. Place into fridge for about 1 hour to let cake firm up slightly, making it easier to slice. Cake can actually be eaten without refrigerating it but it will be easier to slice if it is refrigerated. When ready to serve, slice cake. I don't recommend slicing ahead of time because the bananas in the cake will oxidize and change the color of the cake from light yellow to a brown or gray color. I also recommend only slicing as much as you will be eating to preserve the color.
4. To make frosting, whisk together cream cheese, greek yogurt and maple syrup. Taste and adjust as needed. Frosting can be added before or after the cake is refrigerated.

Frequently Asked Questions

What to make with overripe banana?

What to do with Overripe Bananas: 1. Make chocolate banana bread. 2. Make Chocolate-Bottom Banana Squares. 3. Make smoothies. 4. Make milkshakes. 6. Make banana chocolate chip cookies. 8. Make banana bread pancakes.

What are the best bananas?

Green bananas work better for a type 2 diabetic or someone trying to avoid excess sugar. If you are working on losing weight or building lean muscle then you should stick to green bananas. Yellow banana, on the other hand, is an ideal snack and source of energy and can make a great pre-workout and post-workout food.

What to do with bananas going bad?

Store bananas at room temperature until they are ripe, and avoid exposing them to heat. Hot temperatures will cause the banana to ripen and go bad at a faster rate. Hang your banana bunch on a banana hanger. This helps to prevent the bananas from getting bruised and going bad too quickly.

What can I bake with banana?

Dip bananas in lemon juice; arrange in a greased 2-quart baking dish. Sprinkle with raisins and pecans. Combine sugar, syrup, and water in a small saucepan; cook over medium heat until bubbly. Spoon syrup over bananas; dot with butter. Cover and bake at 350° for 25 minutes. Serve warm with whipping cream, if desired.
