1. Remove the stems from the dried chilies and scrape out and discard the seeds and membranes. Heat a cast iron or heavy pan over medium-high heat and place the chilies in the pan single file so they're not overlapping. Roast on both sides just until fragrant (approx. a couple of minutes) being very careful not to scorch them or they will taste bitter. Remove and let cool. Place the whole spices in the pan and roast until very fragrant, being careful not to scorch them (a couple of minutes). Remove and let cool completely.
2. Once the chilies and spices are completely cooled, place them in a blender or spice/coffee grinder with the remaining ingredients and pulse until it's a powder. Transfer to an airtight jar for storage. For best flavor use within a few weeks.Makes about 1 cup of chili powder.

Anthony Bourdain's New Mexico Style Beef Chili Recipe

9 hours ago Highlandsranchfoodie.com Show details

Add reserved poblano and hatch chili peppers. Bring to a boil and reduce heat to a simmer. Cook, covered for 2-1/2 hours or until beef is fork tender. Remove …

1. Preheat broiler and position rack as close to the broiler heat source. Line the bottom of a broiling pan with aluminum foil (this will catch any juices from the peppers). Place poblano peppers on top of the broiling pan. Place under the broiler. Let cook until peppers’ skin is blackened, turning peppers with tongs so they blacken on all sides, approximately 10 to 15 minutes.
2. Place peppers in a large plastic bag and loosely seal for 30 minutes. Remove and discard as much of the blackened skin as possible along with the stems and seeds. Use your hands. Don't rinse peppers under water, you'll rinse away flavor. If you want your chili to be hotter, leave in some of the seeds (source of the peppers’ heat). Coarsely chop peppers and set aside.
3. Repeat this roasting process for the hatch chile peppers. If you’re using frozen (no need to thaw) or canned peppers (no need to drain), they are likely already roasted, peeled and seeded. In some cases they are already coarsely chopped, too – if not, then coarsely chop them and set aside.
4. In a large mixing bowl, whisk together flour and about 2 teaspoons each of salt and freshly ground pepper. Toss beef in the flour mixture to coat. Heat 2 tablespoons of oil in a Dutch oven (at least 5 quarts) over medium-high heat until just smoking. Add beef in batches and sear until dark brown on all sides. Be sure not to crowd beef too much. Using tongs, remove cooked beef to a plate. Continue to cook remaining beef in batches, so you're not crowding the beef pieces.

2. Add the red chile powder and stir for no more than 30 seconds. The mixture will be quite clumpy. (Don't go past 30 seconds because chile powder can burn easily if the pan is too hot or you cook it too long without liquid.)

1. Add oil to a large pan (dutch oven). Bring to medium high heat. Add pork cubes, onion, cumin, and garlic. Sauté until pork is nicely browned. Meanwhile, in a second large pot (won’t need a lid), cover posole with water and bring to a boil. Add broth to pork, and bring to a simmer. Mix red chile and water, then add to the pork and broth mixture. Add the oregano. Stir well, and cover the pot. Keep the pot at a low simmer. You will need to check periodically, as covered pots have a tendency to boil over.
2. The posole needs to cook about an hour (until tender but not mushy.) When it is done, remove from the heat and drain. I prefer to cook the posole separately so that it doesn’t absorb all the liquid in the pot with the pork. If you’ve substituted canned hominy for the frozen, you will skip this step. You will want to rinse the canned hominy to remove the starch. If you’ve purchased dry posole, follow the instructions on the package to re-hydrate.
3. At this point, the pork should be somewhat tender. However, I prefer to cook the pork for at least 2 hours on the stove, or several hours in a slow cooker. I add the posole about 30 minutes prior to serving to keep it from slurping up the delicious red chile broth.
4. When I am pressed for time, I use my pressure cooker. The pork and onions can be browned on the stove, broth and red chile added, then pressurize on high for about 45 minutes. Depressurize, add the cooked or canned posolé, return to a boil, and then serve.

Frequently Asked Questions

How do you make homemade chili powder?

A typical blend of spices to make homemade chili powder would include two or three parts ground cumin, two parts garlic powder, and one part each of cayenne pepper, paprika, and ground oregano. If you just want enough for one recipe, the part could be a teaspoon, resulting in about 3 tablespoons of chili powder.

What kind of chili powder is best for Mexican dishes?

Guajillo Chili Powder Guajillo is a common pepper in Mexican and Southwestern cuisine. It has a medium level of heat and a tangy flavor. It's great for salsas, sauces, soups, mole and more.

What is Mexican style chili powder?

Chili powder also contains oregano, cumin, salt, and sometimes garlic. Medium and hot varieties are available from specialty spice merchants. Though it's sometimes labeled "Mexican-style chili powder," food historians seem to agree that chili powder didn't come from Mexico, and was invented north of the border.

Are New Mexico chile pods Hot?

New Mexico chiles, while considered a mild heat chile, are a bit hotter at 800-1,400 SHU (Scoville Heat Units) and more flavorful than the California Chiles (500-1,000 SHU). The New Mexico Chile possesses an earthy, sweet flavor with hints of acidity, weediness and dried cherry undertones.
