4. Bake 20 minutes. Oats should be golden and smell of honey. Cool on rack 10 minutes. Remove from pan using parchment overhangs. Cut into 8 rectangles while still warm. Cool completely before wrapping. The bars will firm and crisp up as they cool.

Place on a cooling rack to cool completely. Store in a sealed container or wrapped in plastic wrap.

4. Bake for 15 minutes and then remove from the oven. Drizzle the granola bar mixture with more honey, evenly over the whole surface area (about 1 TBSP) and then bake for about 6 to 8 more minutes, or just until you get a nice golden brown color.

1. Preheat oven to 350 degrees F (176 C) and line an 8x8-inch baking dish with parchment paper.
2. Add oats, almonds, and sunflower seeds to large baking sheet. If sunflower seeds or almonds are already roasted, don’t put them on the pan and reserve to add later.
3. Bake for 13-15 minutes, or until light golden brown, stirring occasionally. In the last 5 minutes of baking, add the shredded coconut and stir. Once everything is light golden brown and toasty, remove from oven and set aside.
4. In the meantime, add peanut butter, coconut oil, and maple syrup to a small saucepan. Warm over medium heat until melted, stirring to combine. Remove from heat when well-mixed and pourable - about 3-4 minutes. Set aside.
