1. If you're measuring the sourdough starter using volume rather than weight, stir it down before measuring.
2. Combine the starter, flours, and water in a large bowl and mix well, until all of the flour is moistened and the dough has formed a cohesive mass.
3. Add extra water or flour if needed to form a soft, tacky dough., Cover the dough and let it rest for 20 minutes.
4. This rest, known as an autolyse, allows the flour to absorb the water, which starts the dough’s gluten formation, and makes it easier to knead., After the rest, add the salt and knead the dough until it’s smooth and supple, though still somewhat soft and tacky.

1. Levain. In the bowl of an electric mixing bowl, combine starter, water and flour until flour is fully absorbed. Cover with plastic wrap and allow to rest at room temperature 8-12 hours.
2. Dough. Add the water, yolks, oil, honey and flour to the starter. Knead for 5 minutes on a medium speed. Slowly add in the salt. Knead for an additional 3 minutes. The dough should pass the windowpane test. Place dough in a large, ungreased bowl, and cover with plastic wrap. Allow to rise at room temperature 4-6 hours.
3. Shape. Weigh the dough and divide into three equal parts for 1 large, three braided challah, or divide into two equal portions for two smaller challah. Further divide each portion into the number of strands you be making for each braid. Shape each portion into long strands and braid as desired. Cover loosely with plastic wrap and allow to rise for 5 hours. The dough will not double in size, but it will increase in volume and look slightly puffy. You will know it’s ready to be baked by impressing a finger slightly into the dough. If the impression comes back most of the way, you are ready to bake. If it bounces back fully, it is over-proofed and should go into the oven immediately.
4. Preheat. Towards the end of the rising time, preheat oven to 350° F.

1. Place 200g of fully fed and active starter in a large mixing bowl. Add the flours, salt, yogurt and oil to it. Mix everything and begin to knead while slowly adding the water. If measuring by volume add enough water to just get all the flour wet. Once the mix comes together cover and set aside for 20 minutes (Notes).
2. After 20 minutes uncover and knead for 10 minutes to get a very soft and pliable dough. If the dough feels very tight add a few drops of water, on the other hand if it feels too sticky add a few teaspoons of flour. Try to keep the additions to minimum. The dough becomes more elastic as you knead. Form into a ball and place in an oiled bowl. Turn to coat all sides of the dough with oil. Cover and set aside to rise for at least 4 hours, till doubled. If the kitchen is warm and the dough seems to rise very fast, transfer to the fridge to slow down its progression.
3. Uncover and punch down the dough. Divide into 8 pieces. Form each piece into a ball. Cover and let rest for 10 minutes.
4. Lightly oil a work surface. Take one dough ball and place it on the work surface. Use the heel of the palms to press the dough and stretch it out into a teardrop shape. Follow any of the following methods to cook the Naan.
