Prepare 2 large rimmed baking sheets, so you can bake the cake layers quicker, if you interchange them, putting one in the oven, rolling out the next layer and then immediately putting it into the oven as soon as the first layer bakes and so on. Also prepare 10-12 pieces of parchment paper as big as the baking sheet.
3. Before you start making the frosting, make sure the pastry cream and the butter are both at room temperature. If one or the other is too cold, the frosting will not be smooth and consistent, but will have a curdled appearance, with bits of butter flecks throughout the frosting that you will not be able to fix.
4. Line your edge of your serving plate/cake stand with aluminum foil. This is a trick I use to keep the edge of the plate clean. Place a dollop of frosting into the center of the plate, just to keep the cake from sliding around.

Add 3 cups milk while whisking. Once milk is incorporate, place over medium heat and continue whisking frequently until thickened and just starts to boil (8 to 10 min)*. Remove from heat right away.
2. Whisk in 1 Tbsp vanilla then add butter and whisk until fully incorporated. Cover custard surface with plastic wrap so a film does not form and let stand at room temperature for one hour until just barely warm.
3. While custard cools, prep cookies and cut in half if large to fit more in the pan. To slice, stack cookies and saw carefully with serrated knife. For the crumb coat, place 3-4 cookies in a large ziploc bag, seal and crush with rolling pin.
4. Remove the base of a 9" springform pan and place the tightened ring over the center of a cake platter. Spread 4 heaping Tablespoons of custard into the center, holding the ring steady. 1. Preheat oven to 200° (400 degrees F) Line a large baking tin with parchment paper.
2. Defrost the puff pastry (follow the instructions on the package) and cut it in equal rectangular or round layers (I cut mine in 2 round layers using the bottom of the spring form pan).
3. Bake the pastry layers for about 20 minutes, or until golden brown. Let them cool and then cut each one in half horizontally. Bake also the leftover pieces of the pastry: they will be used for decoration.
4. Combine 800 ml milk with the sugar and bring them to boil. In the meantime combine 200 ml milk with the eggs, pudding, flour and vanilla extract. Add 5-6 spoons of the hot milk to the cool mixture to equalize a bit the temperatures and stir. When the milk starts boiling lower the heat. Slowly pour the mixture into the simmering milk and keep stirring until the cream gets thick (5-10 minutes). Set aside and cover with cling film placing it against the surface so it won’t form a crust. Let cool for 1/2 hour before assembling the cake.
