Its name refers to its place of origin, Nablus, and it is well known throughout the West Bank and surrounding regions. Nabulsi and Akkawi cheese are the principal cheeses that people consume in Jordan.
It becomes soft and elastic when heated making it idea for frying or grilling. Nabulsi cheese can be eaten fresh as salty table cheese, can be used as a stuffing for phylo dough, short crust pastry or a simple pita pocket.
Bake in a preheated oven, to 200°C/400°F, about 30 minutes or until the top and bottom of the kunafa,/knafeh turn golden and crisp. Remove from the oven, and loose the edges with a knife.
