1. Stir together the water and honey before adding the yeast. Let the yeast proof until foamy (about 10 minutes).
2. Combine the flour, yogurt, melted butter, salt, and yeast mixture and stir to combine (or use a stand mixer with a dough hook). Continue to mix until smooth (about 5 minutes). This dough will be VERY wet and almost paste-like — THIS IS OKAY. Do not expect to be able to work it with your hands.
3. Cover, and let rise until doubled in size (about 1 hour).
4. When the dough has risen, turn it out onto a lightly floured surface and divide into 10 equal pieces. Again, this dough is very wet. It should be workable, but handle it carefully. Gently shape the dough into balls, then roll out into 1/4″ thick rounds.

1. In a large bowl, whisk together the flour, sugar, yeast, salt and anise seeds (if using). Set aside.
2. In a medium bowl, whisk together, the yogurt, olive oil, and 3/4 cup warm water (about 100°F). Add the yogurt mixture to the dry ingredients and mix with a fork. When the dough is about to come together, dust your hands with flour and knead gently into a soft, slightly sticky dough (sprinkle more flour, little by little, if the dough is too wet to work with). As soon as it comes together, stop kneading.
3. Lightly oil or spray a clean bowl with nonstick cooking spray (the bowl should be large enough to allow the dough to double in size). Transfer the dough to the prepared bowl and cover with plastic wrap or a damp kitchen towel. Let sit in a warm place for 1 to 1.5 hours, or until about doubled in size (hint: the warmer the spot, the faster the dough will rise).
4. Fill a small bowl with about 1/2 cup flour. Dust a work surface with some of the flour and dump the dough on top. Sprinkle some of the flour on top of the dough and on your hands. Shape the dough into a long rectangle and cut into 6 equal portions, dusting with more flour as necessary so the dough doesn't stick. Roll each portion of dough in the bowl of flour to keep them from sticking.

1. Mix the dough: Mix the wet ingredients in a large mixing bowl. Add the flour and use your hands to incorporate the ingredients until they are well combined and there are no dry bits left in the bowl. The dough will be stiff. Cover the bowl with plastic and let rest at room temperature until doubled in size. In my 68°F ( 20°C) kitchen, it takes roughly 8 hours. Warmer kitchens will take less time, colder kitchens will take more time.
2. Divide and shape: Turn the dough out onto your work surface and use a bench scraper to divide the dough into 8 equal pieces, about 78g each. Shape each piece into a ball and cover them with a kitchen towel. (At this stage the dough balls can be stored in a covered container, in the fridge for up to 3 days before cooking.)
3. Preheat skillet: While the dough is resting, preheat a cast iron skillet over medium-high heat for 10-15 minutes. If you are worried about sticking, feel free to oil the skillet, but I find it's not necessary.
4. Roll dough: Working with one ball of dough at a time, use a rolling pin to roll the dough into a round shape with a 1/8" thickness. Use a little flour if necessary to prevent sticking. The dough rounds should be about 6" in diameter.

1. In a small bowl, add the sugar, warm water, and yeast together. Stir to combine well. The yeast should be activated when it becomes foamy, about 10 minutes. Transfer the flour to a flat surface and make a well in the middle. Add the yeast mixture, yoghurt, salt and oil, knead the dough until the surface becomes smooth and shiny, about 10 minutes. Cover the dough with a damp cloth and let it rise in a warm place (for example: beside the stovetop or warm oven). The dough should double in size, about 1 hour.
2. Divide the dough into 8 equal portions. Roll the dough to a 8” circle using a rolling spin.
3. Heat up a skillet (cast-iron preferred) over high heat and lightly grease the surface with some oil to avoid the dough from sticking to the skillet. Place the dough on the skillet. When it puffs up and bubbles and burnt spots appear, flip it over and cook the other side. Repeat the same until all dough are done.
4. Brush the naan with the melted butter, serve warm.

1. In an electric mixer, combine the Greek yogurt and self-rising flour until a dough starts to form (I used the dough hook attachment). If the dough is dry, you can add another Tablespoon of yogurt. If it's too tacky, add more flour, a Tablespoon at a time. Continue to knead until the dough comes together. (You can also do this step by hand, but it will take about 15 minutes and some muscle).

Once combined, increase speed to medium and continue to mix for 2 to 3 minutes, or until a smooth ball forms.

1. In a small bowl, combine the yeast, sugar and warm water. Stir to dissolve then let sit for a few minutes or until it is frothy on top. Once frothy, whisk in the oil, yogurt, and egg until evenly combined.
2. In a separate medium bowl, combine 1 cup of the flour with the salt. Next, pour the bowl of wet ingredients to the flour/salt mixture and stir until well combined. Continue adding flour, a half cup at a time, until you can no longer stir it with a spoon (about 1 to 1.5 cups later).
3. At that point, turn the ball of dough out onto a lightly floured surface and knead the ball of dough for about 3 minutes, adding small amounts of flour as necessary to keep the dough from sticking. You'll end up using between 2.5 to 3 cups flour total. The dough should be smooth and very soft but not sticky. Avoid adding excessive amounts of flour as you knead, as this can make the dough too dry and stiff.
4. Loosely cover the dough and let it rise until double in size (about 1 hour). After it rises, gently flatten the dough into a disc and cut it into 8 equal pieces. Shape each piece into a small ball.

1. Start by making your dough. Combine the self-rising flour and the greek yogurt in the bowl of an electric mixer fitted with the hook attachment. This can also be done by hand. Mix the 2 ingredients until the dough starts to form. If the dough is dry, add 1 tablespoon of water. Continue to knead and bring the dough together. If the dough is still barely holding, add the second tablespoon of water.
2. Dump the dough out onto a large, lightly floured surface. Work the dough out into a large disc. Divide the dough into 10 equal pieces. Roll each piece out until it is about 1/3 inch in thickness and has a 6-inch diameter.
3. Place a griddle pan on high heat and let it get very hot. Cook the naan on each side for 2 minutes. Naan should puff up and have a light char. If desired, brush each side with olive oil and a small pinch of sea salt.
4. Once the first side of the naan is cooked, flip the naan over and brush the cooked side with olive oil, sprinkle with about 1/4 teaspoon of cilantro and 1/4 teaspoon of garlic. When the second side is cooked, flip the garlic side onto the griddle surface for just a few seconds. The hot surface will help seal the garlic to the naan.

1. In a large bowl, dissolve the yeast in 1 ½ cups warm (warm – not hot!) water with the sugar. Using a wooden spoon, stir in the flour until no large dry spots remain. Cover the bowl with the plastic wrap and let it sit about 10 minutes. It won’t look much different here, you’re just letting the flour hydrate.
2. Add the sour cream, butter, and salt to the dough, and mix until all the sour cream is well blended – use your hands if you have to. You’re not kneading but just making sure everything is well mixed.
3. Cover the bowl again with plastic wrap and let it sit for 2 hours; the will relax the gluten and further hydrate the flour, making the dough easier to work with. Punch down the dough and cover. Let it rise another 2 hours in a warm, draft-free place (alternatively, instead of letting it rise at room temperature, you can refrigerate it and let it rise very slowly over 24 hours).
4. When it comes time to roll the dough, place it on a lightly floured work surface and divide it into 4 to 6 equal-size pieces, depending on how large you want your flatbreads. If it’s been refrigerated proceed as usual; the only difference is that it’ll be a bit stiffer, which actually makes it easier to work with. Oh, and when I say “lightly floured,” I mean it! You just want to prevent sticking, not add more flour to the dough which can dry it out.
