1. Combine all dry ingredients, and whisk together.
2. Create a well in the middle of the dry ingredients, and add the oil and milk. Mix everything together until it forms a ball. Turn out on the counter and knead until very smooth and elastic — at least 5 minutes — adding more flour as necessary.
3. Let the dough rest for 10 minutes. Divide into 8-10 equal pieces.
4. Heat a skillet over medium-high heat. Roll one piece of dough until very thin (less than 1/8″). If the skillet isn’t non-stick, melt some butter before each piece. One at a time, cook the naan for about 90 seconds, or until parts are blackening, on each side. When they are done, you can brush them with butter and add seasonings (cilantro, garlic, etc.), if you want.

1. Measure the Ingredients and keep it ready - All purpose flour , baking soda , salt , yogurt and canola oil ( mix only 100 grams into the dough and reserve 25 grams to coat the bowl and apply oil over the dough at the end).
2. Place the flour into the sifter / fine-meshed strainer and hold the sifter over the mixing bowl. Place all of the dry ingredients - All purpose flour, salt and baking soda into the sifter at once and sift as normal. Repeat the step and sift at-least two to three times ( sifting the flour helps to remove any small lumps and to distribute them better).
3. To the sifted dry ingredient, add only 100 grams ( 1/2 cup) of oil and mix roughly using your hands , lastly add the yogurt to the flour and give the dough a good mix with your hands; if most of it sticks together (dough starts to come together), then you can stop ( make sure any dry bits at the bottom of the bowl is incorporate ). Note - dough will be a loose dough and not like a usual roti / chappati dough).
4. Now grease a large bowl with one tablespoon oil ( the dough will rise three times its original size, so make sure to use a big bowl ) and then place the prepared dough into the bowl and smear one tablespoon of oil on the top of the dough. Cover the bowl with the clear wrap only ( do not use a damp cloth to cover it) . Leave the dough to rise in a warm area ( prefer to leave it inside the oven with the lights on ). Let the dough rest for at-least three to four hours.

1. In a large bowl, stir together the all-purpose flour, white whole wheat flour, salt, and baking powder.
2. Add the yogurt. With a spoon, stir to combine, pressing the yogurt into the dry ingredients. Once it seems that you can't moisten the flour further, sprinkle 2 tablespoons water over the top (if you are using regular yogurt or your yogurt is on the thinner side and it doesn't seem like your dough is crumbly but not dry, you may not need the water at all). Depending upon how thick or thin your yogurt is, you may need more water. If so, add additional water 1 tablespoon at a time, stirring thoroughly between each addition, until the flour-yogurt mixture forms big clumps. Once you’ve mixed as best as you can with a spoon, use your hands to squeeze the dough together in a ball.
3. Knead the dough in the bowl for 1 to 2 minutes, until it feels fairly smooth and cohesive. Cover the bowl with a towel and let sit at room temperature for 30 minutes. (The naan won't rise; this step is to relax the gluten in the flour and let the wet/dry ingredients fully incorporate so that your naan is tender.)
4. Prepare the butter (or garlic butter): During the last 10 minutes of the dough’s resting, melt the butter in a small pot over medium heat. Once melted, add the garlic and cook for 1 to 2 minutes, just until fragrant. Remove the pan from heat. If you prefer not to make garlic butter, simply omit the garlic and melt the butter on the stove or in the microwave.

1. Put flour, salt and nigella seeds in a bowl and give them a bit of a whisk with a fork or balloon whisk.
2. Add yogurt and start mixing it into the flour mixture with your hand adding some lukewarm water bit by bit as you mix. Only add enough water to make your dough come together. You might not need the entire 115ml / 1/2 cup. It will depend a lot on the flour you are using too.
3. You will get nice and flexible dough that is slightly rough and sticky. You will not need to knead it for a long time only to bring it together to shape a ball. Put the dough ball back in a bowl and cover with clean tea towel and leave to rest for anything between 30-60 minutes (however much time you’ve got). The dough will not raise during this time as there is no yeast.
4. Take the dough ball out of the bowl and put on a kitchen counter dusted lightly with flour. Divide the dough into 8 equal size balls. Flatten each ball with the palm of your hand and stretch it lightly into the oval shape 15-18 cm long.

1. In a large bowl, whisk together the flour, sugar, yeast, salt and anise seeds (if using). Set aside.
2. In a medium bowl, whisk together, the yogurt, olive oil, and 3/4 cup warm water (about 100°F). Add the yogurt mixture to the dry ingredients and mix with a fork. When the dough is about to come together, dust your hands with flour and knead gently into a soft, slightly sticky dough (sprinkle more flour, little by little, if the dough is too wet to work with). As soon as it comes together, stop kneading.
3. Lightly oil or spray a clean bowl with nonstick cooking spray (the bowl should be large enough to allow the dough to double in size). Transfer the dough to the prepared bowl and cover with plastic wrap or a damp kitchen towel. Let sit in a warm place for 1 to 1.5 hours, or until about doubled in size (hint: the warmer the spot, the faster the dough will rise).
4. Fill a small bowl with about 1/2 cup flour. Dust a work surface with some of the flour and dump the dough on top. Sprinkle some of the flour on top of the dough and on your hands. Shape the dough into a long rectangle and cut into 6 equal portions, dusting with more flour as necessary so the dough doesn't stick. Roll each portion of dough in the bowl of flour to keep them from sticking.

1. In a large bowl, whisk together the flour, salt, and instant yeast. In a medium bowl or a liquid measure, stir or whisk together the water and yogurt. Add the yogurt mixture to the flour mixture and stir to combine with a spatula. When the mixture becomes too stiff, knead with your hands for about a minute or until the flour is incorporated and you have a sticky, wet ball. Cover with a towel or cloth bowl cover, and let rise in a warm spot for 1 to 1.25 hours. (See notes above for creating warm spot. See notes above for making dough ahead of time.)
2. Turn dough out onto a lightly floured work surface. Divide into 4 equal portions, then shape each into a ball. Let rest for 5 minutes.
3. Heat a large skillet (something like cast iron is great) over high heat. You want it very, very hot. Using a rolling pin dusted in flour, roll one ball into a thin large round or oval (8- to 9-inches in diameter, roughly), using flour as needed to prevent sticking. Repeat with another round. (I like to start with 2 rounds rolled out; then I roll the remaining 2 while the first 2 are cooking.)
4. When the skillet is very hot, transfer rolled out round, dusting off excess flour if possible, to the skillet. Cover. Cook for 1 minute. Close to the end of the minute, you’ll hear the pan hissing a bit … this is a good sign. Flip, and cook for another 30 seconds uncovered. Transfer to a plate and brush the top lightly with melted butter.

1. In a large bowl, stir in together the self-rising flour with the Greek yogurt until mostly homogeneous. If you want, mix in salt as well. SEE PIC.1
2. Transfer dough to a lightly floured surface. Using your hands, knead naan dough, adding more flour little by little as needed or just until the dough comes together and is not sticky anymore. Then shape that smooth dough into a ball. This process takes about 5 minutes. SEE PIC.2
3. Divide that large dough ball into 8 smaller equal parts. Using a floured rolling pin, roll dough out over a floured surface, forming 5-6 inch long flat breads (SEE PIC.3). They must be thin so they can rise/puff up a little when cooking. By the time you roll out all 8 pieces, it is time to cook them. About 10-15 minutes have already passed. Don’t let them sit around for longer, otherwise they may not puff up as much and may become denser.
4. As soon as you finish rolling out the flat breads in an oblong shape, heat a large cast iron skillet (or griddle if you want grill marks) over medium-high heat and then cook each naan for about 2 minutes per side or until cooked through. They will puff up a little! It will take longer to cook if you use a griddle.

1. In a small bowl, add the sugar, warm water, and yeast together. Stir to combine well. The yeast should be activated when it becomes foamy, about 10 minutes. Transfer the flour to a flat surface and make a well in the middle. Add the yeast mixture, yoghurt, salt and oil, knead the dough until the surface becomes smooth and shiny, about 10 minutes. Cover the dough with a damp cloth and let it rise in a warm place (for example: beside the stovetop or warm oven). The dough should double in size, about 1 hour.
2. Divide the dough into 8 equal portions. Roll the dough to a 8” circle using a rolling spin.
3. Heat up a skillet (cast-iron preferred) over high heat and lightly grease the surface with some oil to avoid the dough from sticking to the skillet. Place the dough on the skillet. When it puffs up and bubbles and burnt spots appear, flip it over and cook the other side. Repeat the same until all dough are done.
4. Brush the naan with the melted butter, serve warm.
