1. It's very important that coriander and onion are very finely chopped. Rinse and finely chop coriander. Then peel and finely chop onion. In a bowl combine ground meat, finely chopped coriander, onion, ground cumin, oil and salt. Using your hands mix well, until you have a smooth mixture. Cover and put in the fridge.
2. Roast the sesame seeds in a pan over medium heat, until lightly brown. Be careful not to burn the seeds. It's important to roast a small quantity of sesame at a time. Pour the roasted sesame seeds on a plate and let cool. Repeat the process until you've roasted all the seeds. Put sesame seeds in a blender or food processor and blend. If you're using a mortar, put ¼ of the sesame seeds in a mortar and grind them with the pestle. Continue grinding until the seeds are ground down to a fine powder. Put ground sesame on the plate and grind the remaining seeds.
3. In a bowl combine plain flour and water and mix well, until you have a smooth dough. Transfer the dough to a lightly floured working surface and knead for 3 minutes. Cover with a kitchen towel or bowl and let rest for 10 minutes. In the meantime make the sesame-tomato-dip

1. Chicken Keema (Minced chicken) Mix ground chicken, finely chopped onion, spring onion, coriander leaves, ginger garlic paste, chilly powder, cumin powder, coriander powder, salt and grease (butter or oil) until mixed properly. When mixed, leave it for 30 mins so the ingredients mix well for the flavor. Dough Mix water and butter and the flour. Gently add water so the dough does not get too sticky and soft. Knead thoroughly until it stops sticking on your hands.
2. Boil water on a steam pot. Use medium flame so when you have momos fillings ready to steam, you don't have to wait for a long time. Add one or two bay leaves in the water for the aroma. Take a portion of kneaded dough and flatten with a pin. Try to make it thin so that the real taste of momo breaks into your mouth when you chew momo. But do not make it too thin so the wrapper breaks while holding the chicken filling. We use a steel glass to cut the wrappers uniformly. You can use sharp edged circular tool to cut uniform sized wrapper. Fill the chicken filling into the wrapper and fold it the way you like it. Place the momos into the steamer. Steam it for 20-25 minutes in. Once cooked you can see the wrapper is more translucent. Hot steamy momos are ready to serve.

1. Make the dumpling dough: In a mixing bowl whisk together the flour and salt. Add the water and oil and mix the dough until it comes together. Turn out onto a floured counter and knead the dough, adding more flour as necessary, until you have a smooth and barely tacky dough. Put the dough back in the mixing bowl and cover with a damp towel. Let the dough rest for 30 minutes while you prepare the filling.
2. Add the shredded cabbage, shredded carrot, and sliced scallions in a large mixing bowl. Add the salt and toss to combine. Let the mixture sit for 5-10 minutes, then squeeze out extra water from the cabbage. You can do it easily in a thin tea towel, nut milk bag, muslin or layered cheese cloth.
3. Dump out the water and add the vegetables back into the mixing bowl. Toss with the ginger, garlic, cilantro tofu, black pepper, and oil. Taste and add salt if needed.
4. When the dough has rested for a half an hour, divide it in half. Leave one half under the damp towel, and roll the second half out on a lightly floured counter until it is very thin, basically as thin as you can roll it. Lift the dough and rotate, flip and dust with more flour as you roll to keep it from sticking.
