Almond milk. It may also contain starches and thickeners to improve its consistency and shelf life. People who are allergic to almonds or nuts should avoid almond milk. Almond milk is lower in calories than other milks, as long as it is unsweetened. It's also free of saturated fat, and it's naturally lactose-free.
Soy milk contains no lactose since it's made from soybeans, which are naturally lactose-free. Lactose-free milk still contains the same amount of calcium, essential for bone growth, as regular milk. Soy milk has no natural calcium but manufacturers often add calcium to help consumers meet their daily calcium needs.
Directions. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets. Bake 8 to 10 minutes in the preheated oven, or until golden.
