All you need is a good, firm aubergine, super-ripe tomatoes, crunchy pistachios, curry paste and some fresh coriander.
Sweet potatoes, green beans, baby aubergines, brown onions and okra are some of the ingredients in this vegetable curry. Originally I saw this recipe on a pack of curry leaves but later discovered it is actually a Jamie Oliver recipe. Heat up the ghee or vegetable oil in a large deep-sided frying pan or flameproof casserole.
Preheat the oven to 200ºC/400ºF/gas 6. In a large roasting tray, mix the curry paste with a pinch of sea salt, 2 tablespoons of oil and 1 tablespoon of vinegar. Wash the parsnip, carrots and butternut squash (we’re leaving the skins on).
” In a little vegetable oil, fry the onion gently for 10 minutes in a large pan then add the remaining vegetables and stir together. Add the curry base sauce and simmer gently for around 25 to 30 minutes, taking care not to overcook the vegetables. If the sauce becomes too thick, add a little water to give you the desired consistency.
