1. NOTE: Directions are for the original Sweet Pepper Soup. Sometimes, however, I like to "mix things up". For my second version, I reduce the chicken broth to 4 cups, add 1 (14 1/2 ounce) can diced tomatoes (I use Del Monte Petite Diced Tomatoes), 1-2 teaspoons of Dijon Mustard, and 1 cup of sour cream. It is a thicker, heartier soup that is equally enjoyable, just different.
2. Melt one tablespoon of the butter over medium heat in a large Dutch Oven.
3. Sweat the onions for 5 minutes until translucent and slightly yellow. I keep them covered during this process. If necessary, add additional tablespoon of butter so the onions do not burn.
4. Add the three different coloured peppers, stirring well, to mix the soft onions and butter with the peppers. Set timer for 15 minutes; every 5 minutes, stir the peppers and onions and "taste test" the peppers to YOUR degree of doneness. We really enjoy a very soft pepper so it takes the full 15 minutes to achieve that texture.

What are some recipes for green peppers?

Directions In a large saucepan or Dutch oven, combine tomatoes, onion, celery, tomato sauce, water, 1 teaspoon salt and 1/4 teaspoon pepper. Meanwhile, cut tops off of green peppers and remove seeds; set aside. Cover and simmer for 40-45 minutes or until beef is cooked and peppers are tender.

How do you cook stuffed green peppers in crock pot?

Stuff each green bell pepper with ground beef mixture. Arrange stuffed bell peppers in the crock of a slow cooker; place the reserved tops back onto each bell pepper. Pour water around the base of each stuffed bell pepper. Cook on Low for 6 to 8 hours.

What to do with green peppers?

Green bell peppers are best suited for both raw and cooked applications such as baking, sautéing, roasting, and grilling. When used fresh, the pepper can be chopped and tossed into green salads, sliced as an appetizer for dips and spreads, chopped for salsa, or layered on sandwiches for an added layer of crunch.
