1. Oven Directions:If not using my gfJules Sandwich Bread Mix, whisk these dry ingredients together in a large bowl: GF flours, milk powder, baking soda, baking powder and salt.
2. In the large mixing bowl of a stand mixer, stir together the wet ingredients: honey, liquid of choice (club soda/gingerale/yogurt etc.), apple cider vinegar, oil and egg or flax seed and water mixture. Gradually add the dry ingredient mix in with the wet by pouring slowly into the wet bowl while mixing with the paddle attachment. Once incorporated, add the yeast granules and beat well for 1 - 2 more minutes.
3. If using yogurt, the dough will be very thick (much more like regular wheat flour bread dough than you may be used to with gluten free); however, if the dough seems too thick to spread into a loaf pan, gradually mix in milk, one tablespoon at a time, until the dough is still thick, but able to be smoothed with a spatula. If using another liquid, the dough will be more batter-like and easier to pour into the pan.
4. Scoop the dough into an oiled bread pan (use a dark metal pan if you like a darker crust on your bread; lighter, shiny metal or glass if you like a light crust). The pan should be at least 8.5 x 4.5 inches; 9 x 5 or Pullman pans work well.

1. Add the vitamin C crystals and room-temperature flour to a medium-sized mixing bowl, then whisk them together. (Leave out the vitamin C crystals if you will be using lemon juice and vinegar instead.)
2. Make a well in the flour, then add the smaller amount of sugar and the yeast to the well. You can use either quick rise or active dry yeast in all of my bread recipes.
3. Warm your seltzer water to 80 degrees Fahrenheit. Use a thermometer to verify the temperature. If it is 74 degrees or more in your kitchen, just use room temperature seltzer water. Pour the seltzer water into the well, then set a timer and wait five minutes to let the yeast get bubbly. (For using lemon juice and vinegar instead of vitamin C crystals, decrease the amount of seltzer water to 380 grams, and add 10 g of lemon juice and 10 g of distilled vinegar to the water in the well after the yeast gets bubbly.)
4. Stir the liquid into the flour until you have a uniform dough. Make a well in the dough, then add the larger amount of sugar, the salt, and the vegan butter to the well. DO NOT stir them in yet! Place the bowl into a clean trash bag, twist the end, and tuck it under the bowl. Set a timer for one hour. Grease and flour your 8.5 x 4.5 x 2.75 inch loaf pan while you wait. This is an essential step, even with pans that are supposed to be non-stick. You want your loaf of bread to turn out of the pan easily, and the flour really helps the dough to rise up the sides of the pan properly.

2. In another bowl, add the dry ingredients and mix well.
3. Add the yeast mixture, oil and warm almond milk and knead for 8 minutes into a soft smooth non sticky dough.
4. Use more water or flour if needed. I added another Tablespoon water. It will depend on the consistency of the non dairy milk and if you used sugar or maple syrup.

1. Whisk together the milk, yeast, and 1 tablespoon of sugar. Let sit until the yeast has proofed (almost double in size with a head of foam about 1 inch thick), 5 – 10 minutes.
2. Grease a 9.25 by 5.25 by 2.75 inch loaf pan with oil. Sprinkle in some sweet rice flour, coat the pan, and tap out the excess.
3. Whisk the rice flour, tapioca starch, sweet rice flour, psyllium husks powder, salt, and remaining 2 tablespoons of sugar. Add the proofed yeast mixture, eggs, and oil, and whisk until smooth and lump free. Pour into the prepared pan, cover with a clean tea towel and let rise in a warm, draft free environment for 20 or 25 minutes or until the batter comes almost to the top of the pan. Preheat the oven to 375 while the bread is rising.
4. Bake the bread for 30 – 40 minutes or until golden brown. Let cool in the pan then remove to a wire rack to finish cooling.
