1. Mix all dry ingredients in a bowl. Almond flour tends to clump, if you run into this problem, just use a fork, spoon or hand to break down Ingredients until finely mixed.
2. Next take wet ingredients and incorporate into dry mixture. Again making sure to break up any lumps to get nice smooth consistency.
3. Let your batter sit for 5-7 minutes, it will grow in size and slightly thicken as well.
4. Spoon the batter into a WELL GREASED doughnut pan. This is a very delicate doughnut and if you have to force them out, they will likely break. Ideally you want them to just 'pop' out, so make sure to generously grease the pan!

1. Mix the aquafaba with the ground flaxseed in a small bowl.
2. Place the aquafaba mixture, water, coconut milk, and melted coconut oil in the bread machine pan or stand mixer bowl, then add the dry ingredients, except for the yeast. Make a small indentation in the dry ingredients, then add the yeast. Set the bread machine on the ‘dough’ setting. Remove when dough has doubled in size.
3. Place the dry ingredients in a bowl. Put 6 tbsp of lukewarm water in a cup and sprinkle the yeast on top, set aside for about 5 minutes, until the yeast begins to react (you can add a pinch of sugar to help it). Make a well in the center of the dry ingredients, then pour in the yeast mixture, coconut milk, aquafaba mixture, and coconut oil. If using a stand mixer, run with the dough hook until a dough forms then continue for about 5 minutes. By hand, knead for about 10 minutes. Cover and set aside until at least doubled in size.
4. Once the dough has risen, place it on a floured surface and knead lightly. Divide it in half, keeping half the dough covered, so it doesn’t form a skin. With a rolling pin, roll out half of the dough to about 1/2″ thickness. (Do not rest the dough.)

1. Put all the dough ingredients, apart from the butter, into the bowl of a mixer with a beater paddle. Mix on a medium speed for 8 mins or until the dough starts coming away from the sides and forms a ball. Turn off the mixer and let the dough rest for 1 min. You can also do this in a food processor, slowly pulse until the dough starts to stick together around the sides and can be easily shaped into a dough ball.
2. Start the mixer/ food processor up again on a medium speed and slowly add the butter to the dough. Once it is all incorporated, mix on high speed until the dough is glossy, smooth and very elastic when pulled. This will happen very quickly in a processor, but may take a few minutes with a mixer.
3. Cover the bowl with cling film or a clean tea towel and leave to prove until it has doubled in size. Knock back the dough in the bowl briefly, then either divide into 5 or re-cover and put in the fridge to chill overnight.
4. If cooking immediately, roll the dough pieces into smooth. Then skip to the steps below for frying.

1. Preheat the oven to 350°F (177°C) and spray a 6 regular size donut pan well with nonstick spray. If you don't spray them, they WILL STICK. This recipe makes 7 donuts, which I know is a little annoying since the pan is only 6 but hey, you get an extra donut and the batter is totally fine sitting out as the first batch bakes. Also, this may VARY depending on your pan having different donut size holes or depth of each one.
2. To a large bowl, add the almond flour, rice flour, potato starch, baking powder, cinnamon and salt and whisk very well to ensure there are no lumps. Pour the syrup and milk over the dry ingredients and whisk until completely smooth. It should be similar to a cake batter, pour-able. Do not worry about over mixing, this is a gluten-free batter and the smoother, the better.
3. Divide the batter evenly into the 6 donut pan, reserving enough for the 7th donut. Basically the batter should be filled up to about 1/8- 1/4 inch gap remaining at the top of each cavity.
4. Bake 12-15 minutes. Each batch mine were perfect at 14 minutes. They are done when a toothpick basically comes out clean. A few dry crumbs are ok, as they will still finish cooking as they cool. Do not overbake.

2. Place the chia seeds in a mug and cover with the water. Stir well and set aside for 15-20 minutes – this will form a thick and gloopy paste which makes a fabulous, vegan-friendly egg replacer.
3. Mix all of the dry ingredients (flour, coconut sugar, baking powder, cinnamon and beetroot powder) in a large mixing bowl.
4. In a saucepan place the coconut oil, almond milk, apple cider vinegar and vanilla extract. Put on a low heat until the coconut oil has melted – you don’t want it to bubble or boil, so remove from the heat as soon as it’s all liquid.

1. Preheat the oven to 350°F (177°C) and spray a 6 regular size donut pan well with nonstick spray. Wipe off any excess if it's pooling at the bottom. If you don't spray them, they WILL STICK. This recipe makes 6 regular size donuts. This may VARY depending on your pan having different donut size holes or depth of each one.
2. First, make the pecan flour by adding a half cup of pecans to a food processor or vitamix. This will happen VERY quickly in a vitamix. I actually find it's much easier to get a flour consistency (that doesn't get too wet fast) in a food processor. You don't want to overprocess or it will turn into paste. Pecans are naturally very oily, so if you overprocess it will quickly go from flour to paste. Process starting on slow and then high until it's a flour, just a few seconds. See photo in post how it should look. You don't want big chunks, but should be a meal consistency. If nut-free, you will use the sunflower seeds option, getting it as fine as you can.
3. Now make sure to measure out just 63 grams from the ground up pecan meal. You may have slightly extra from the processor, so just eat it. Add to a large bowl. If you weighed the correct amount of pecans, it will be the correct amount of flour. If you didn't weigh, make sure to use the correct amount of pecan flour.
4. To the bowl of pecan flour, add the rice flour, potato starch, baking powder, apple pie spice and salt and whisk very well to ensure there are no lumps.
