GlutenFree Chicken and Sausage Gumbo Recipe Allrecipes

I modified my mother's chicken and sausage gumbo recipe to make it gluten-free. Good gumbo is hard to find for my friend with a wheat allergy. The wheat flour roux is the key ingredient for any gumbo. After experimenting with a few gluten-free alternatives, I find that a light brown millet flour roux thickens the gumbo

1. Place chicken in a 6- to 8-quart stockpot and pour in enough water to completely cover the chicken; bring to a boil, reduce heat to medium, and simmer until chicken is no longer pink at the bone and juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).
2. Remove chicken from water and place on a work surface to cool, retaining the resulting chicken stock in the stockpot.
3. Cook and stir millet flour and vegetable oil together in a large frying pan or skillet over medium heat until roux is smooth and slightly darker than peanut butter, about 10 minutes.
4. Mix onion, green bell pepper, and garlic into roux; cook and stir over low heat until fragrant, 2 to 3 minutes. Transfer onion-roux mixture to stockpot with chicken stock.

1. Heat a large heavy-bottomed pot or dutch oven over medium heat. Once hot, add in ½ tablespoon of avocado oil. Next, add the chicken thighs to the pot and season with salt and pepper. Cook the chicken until mostly brown, and then add in the smoked sausage. Let the meat continue to cook until the chicken is fully cooked. Transfer the chicken, sausage, and any remaining liquid from the pot to a bowl and set aside.
2. Next, make the roux. Add the diced butter butter to the pot and let it melt over medium heat. Once the butter is melted, whisk in the flour to create a thick paste.
3. Let the flour and butter mixture cook over medium heat, whisking frequently, for around 20 minutes until it becomes a dark rich color. Be careful to watch the roux so it does not burn.
4. Add the bell peppers, onion, garlic, celery, cajun seasoning mix, and tomato paste to the hot roux and allow the veggies to cook for a few minutes until they start to become tender.

1. Soak the beans in enough water to cover 8 – 24 hours. Reserve the seasoning packet. Rinse and drain the beans, put in a large soup pan with 10 cups water, the reserved seasoning packet and the granulated garlic. Bring to a boil, reduce heat and simmer, covered, for 1¼ hours.
2. While the beans are simmering, heat the oil in a skillet over medium heat. Whisk in the sweet rice flour and cook until it becomes deeply browned, stirring occasionally, about 20 minutes. Stir the onion and celery into the flour mixture; it will become very thick. Stir the flour mixture into the beans after they have simmered for 1¼ hours.
3. Heat the remaining tablespoon of oil in a skillet and cook the bells peppers until they start to soften and brown, about 5 minutes. Add to the beans. Add the okra to the skillet and cook, stirring often, until they start to brown, about 5 minutes. Stir into the beans. Let the beans simmer for another ½ hour to thicken.

1. Add two tablespoons avocado oil to a large, heavy-bottomed stock pot over medium-high heat. Pat the chicken thighs dry and add to the pot (you may need to work in two batches) skin side down. Cook for 4-5 minutes, until skin is browned, then flip and cook for an additional 2-3 minutes, until browned, then remove the chicken from the pot.
2. Add the sliced sausage to the pot and cook for about 2 minutes, until browned, then flip the sausage and cook for an additional 1-2 minutes, then remove the sausage from the pot.
3. Drain off all but two tablespoons of oil from the pot and reduce the heat to medium. Add the onion, celery, bell pepper, garlic, and salt to the pot. Cook for 5-7 minutes, until the onion is translucent and the celery and bell pepper have started to wilt. Remove the vegetables from the pot and set aside.
4. Add 1 cup avocado oil or butter to the pot over medium heat. Once warmed through (about 1 minute), add the flour and whisk the two together to combine. Continue to stir the mixture for about 12-15 minutes, until the roux achieves a peanut butter color and nutty fragrance. (Note that the roux may immediately turn brown from picking up the browned bits in the pot, but it will continue to darken in color and become more fragrant as you cook).

No Roux Gumbo Recipe {Easy + Gluten Free} Two Pink …

I came up with this recipe based on my mom’s gumbo recipe which is heavily inspired by Justin Wilson. 1. Begin by adding a little olive oil and butter into the bottom of a dutch oven.
2. Add the onions and let them simmer. After they become translucent add the chopped bell pepper and celery.
3. Add the sausage slices into the mix as well as the chicken. I tend to do everything in a dutch oven on the stove top but if necessary feel free to sauté in a separate skillet and then add to the mix.
4. Once everything is softened add the chicken stock, water, frozen okra, can of diced tomatoes with chiles (do not drain).

1. Make your roux: heat 1/3 cup bacon drippings in a large Dutch oven over medium-low heat. Sprinkle in cassava flour and whisk until a smooth paste forms. Cook this mixture, whisking almost constantly, for about 30 minutes, or until it turns a deep amber color. Don't let it burn - let this process happen slowly and gradually. This is what gives a real gumbo its rich flavor!
2. Meanwhile, add your celery, onion, bell pepper, and garlic to a food processor and pulse a few times until the mixture is finely chopped.
3. When roux is a rich amber color, stir in the celery, onion, bell pepper, and garlic mixture; add the sliced sausage. Stir well then add 1 cup water and whisk well. Bring the mixture to a simmer over medium heat and cook until the vegetables are softened a bit, about 15 minutes. Add the second cup of water, if needed, to keep the mixture from burning on the bottom of the Dutch oven.
4. Meanwhile, bring 4 cups beef broth to a boil in a medium saucepan. If you have not used both cups of water yet, heat the 2nd cup of water with the beef broth. Stir hot broth into the roux-vegetable mixture and whisk well. Stir in coconut aminos, salt, hot sauce, Cajun seasoning, bay leaves, dried thyme, and diced tomatoes. Simmer for 2 hours over low to medium-low heat. If you have gumbo filé, add 1 teaspoon to the soup after 1 hour.
