1. Add the flour, baking powder and yoghurt to a large bowl.
2. Mix with a wooden spoon at first to roughly combine then get your hands in there and knead the ingredients until they are properly combined and you are left with a pliable dough. If the mixture is too dry add a little water, if too wet sprinkle with extra flour until you get the consistency pictured below.
3. Add the olives and sundried tomato slices onto the dough and combine to ensure they are evenly distributed throughout. Don't overmix though or your sundried tomatoes with completely meld into the dough (not a bad thing really, as they will still taste great, but visually I prefer to have the red tomato stripes running through the flatbread).
4. Lightly flour a board and rolling pin. Take a sixth of the dough and roll into a ball shape. Flatten it out with the rolling pin until it is around 5mm thick. OR If you are rolling pin-less or in hurry, you can always flatten them with you hands for a more rustic finish. I often do this as it's so quick!

1. In a large bowl, mix together the vegan yogurt, olive oil, baking powder and salt until uniform.
2. Sprinkle the gluten-free flour over the wet mixture and mix it through until a dough forms. The goal here is to have a smooth and soft dough that does not crumble and that is not too sticky. If the dough is too sticky, add additional flour, 1/2 tablespoon at a time, as needed. If the dough is too dry, add water, 1/2 tablespoon at a time, as needed.
3. Flour a clean work surface and preheat a greased pan over medium heat. We prefer to use a cast iron griddle or skillet for this as we have found it yields the best results vs. a non-stick pan. We also prefer to use our granite counters, a marble board or plastic cutting boards instead of a wooden one as we have found that it sticks less.
4. Divide the dough into 8 and roll each into a ball. Place 1 ball on the floured work surface and using a rolling pin or an empty bottle, roll out the dough until it is about 1/4-inch thick. Transfer the dough onto the heated pan and cook for 1 1/2 to 2 1/2 minutes on each, or until browned and cooked through. Check the dough after 1 1/2 minutes to ensure that it is not burning. If it cooks too fast, lower your heat as needed. We often find that our first flatbread becomes the test for proper heat level/cooking time and the remaining flatbreads cook more efficiently and successfully.

1. Combine your water and flour in a sterile glass jar or clean glass bowl. Ideally, you'd do this in the morning, and then feed the starter the same amount again in the evening. If your starter is not the consistency of a thick paste, add more water. It should not have a dry, crackly top - add a little extra water if it does.
2. Continue this pattern of feeding until the starter begins to bubble, and become active. It should be roughly the consistency of a thick pancake batter. After 2 or 3 days, or when there are considerable bubbles on the starter, discard around half of the starter (see intro on what to use discard for) and feed the starter as per usual. Discard once a day for optimal results.
3. To keep your starter alive, continue to feed it once or twice a day, with the same 50g flour and water measurements. Stir well to incorporate after each feed. The starter should look like a thick paste but without a dry crackly top - you can add more water to achieve this consistency if necessary. Every gluten free flour is different (including each bag) so I often eyeball how much water I add. Discard or use starter every couple of days, and feed after each discard. Most gluten free bread recipes I have seen ask for 1 cup of sourdough starter per loaf, so make sure you have enough to make a loaf and also keep the starter going.
4. To store the starter, see notes and links in the introduction.
