2. Combine the warm water, yeast, and sugar together in another large bowl and mix well. Set aside for 5 minutes. (You should start see bubbles at the surface. If not, it means the yeast has expired and is not working, so you will need to use yeast from a new packet.)
3. Once the yeast mixture starts to form bubbles, add the oil, apple cider vinegar, beaten eggs and whisk well until you get a homogeneous yellow frothy liquid.
4. Sift the dry ingredients into the bowl with the wet ingredients and mix thoroughly for a few minutes until you get a dough that is sticky but not too liquid. (If the dough is too wet, add one tablespoon of gluten-free flour at a time, but do not add too much. Gluten-free bread dough will always be a little wetter than normal bread dough, and it is perfectly fine.)

1. Preheat the oven to 190'C / Gas 5. Line a baking sheet with a piece of baking paper and set aside.
2. Mix the yoghurt, milk and lemon juice in a bowl and stir. The lemon juice should cause the milk/yoghurt to curdle a little, which is what you're going for here!
3. In a large mixing bowl, add the flour, salt, xanthan gum, sugar and bicarbonate of soda and mix well. Pour in the yoghurt/milk/lemon mixture and then add the egg (which should be whisked just enough to combine the yolk and white).
4. Use a wooden spoon to bring the mixture together into a soft, sticky dough. Dust the worktop with a sprinkle of gluten free flour and turn out the dough. Dust some gluten free flour on your hands as well as and then lightly mould the dough together into a ball - if it is a little difficult to handle at first, you should find with the extra flour it starts to become more workable. Don't over-work it as you don't want to add too much extra flour to the mix.

1. Lightly oil a 8x4 inch bread pan.
2. Add yeast, inulin and warm water (105 -110F) to a cereal sized bowl and mix with a fork until the yeast is somewhat dissolved. This is important! See post. The inulin feeds the yeast just like sugar does in traditional recipes. You can use sugar if you don't have this. It won't cause the carbs to increase because the yeast eats the sugar and converts it to carbon dioxide. Let this bowl of yeast water stand for ten minutes while you gather the other ingredients. It should bubble and grow in size. This is called proofing.
3. Mix all dry ingredients in a large mixing bowl while the yeast is proofing. Set aside.
4. Add all of the wet ingredients EXCEPT YEAST MIX to a separate bowl and mix until thoroughly combined.
