“Texas Red” is traditionally a chili made without beans or tomatoes. It’s chunky, quality meat cooked down with some serious chili powder (or dried, roasted chiles that have been finely ground), oregano, beer or broth and cumin.
Stir in kidney beans, diced tomatoes, tomato puree, water, green chile peppers, chili powder, salt, cumin, and black pepper. Cook on Low until flavors combine, 4 to 6 hours. This homemade chili is hearty and meaty, and is very quick to make.
In a large pot over high heat combine the ground beef, tomato juice, tomato sauce, kidney beans, pinto beans, onions, bell pepper, cayenne pepper, sugar, oregano, ground black pepper, salt, cumin and chili powder. Bring to a boil, then reduce heat to low. Simmer for 1 1/2 hours.
