1. Toss fruit, sugar and lemon (or lime) slices in a large pot. Cover and let macerate overnight.
2. Transfer the pot to the stove and bring the mixture to a simmer over medium heat, stirring occasionally. Cover, lower the heat to maintain a simmer and cook until the fruit shrinks slightly and the syrup starts to turn the pale color of the fruit, adding water as needed to keep the syrup pale and thin, at least 15 minutes and up to 1 hour. (For fruits like strawberries, blackberries, figs and watermelon flesh, 15 minutes may be all the time you need. For apples, pears, citrus and watermelon rinds, you’ll need to cook them a bit longer until some of the fruit becomes translucent.) Remove from heat and let cool for at least 1 hour.
3. Transfer the fruit and syrup into jars, cover tightly and refrigerate for up to 3 months.

1. Combine apricots, xylitol, cinnamon, and lemon juice together in a saucepan. Bring to a boil, stirring constantly, and continue boiling until a thermometer inserted into mixture reads 220 degrees F (104 degrees C), 10 to 15 minutes.
2. Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apricot mixture into hot, sterilized jars, filling to within 1 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
3. Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 5 minutes.
4. Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

2. Heat the pressure cooker base on low heat (keep warm setting on electric cookers). Add the kiwis, sugar, lemon zest and juice, and oil and stir to mix well. Cook at high pressure (see Notes) for 3 minutes/all cooker types. When the time is up, open the pressure cooker using the Natural Release method (see page 15); this should take 10 to 15 minutes for a stovetop cooker, 20 to 30 minutes for an electric cooker.
3. If you wish, use a potato masher to push down on the fruit a few times to break it up a little more. Then heat the cooker base on medium heat and bring the contents to a rolling boil. Stir in the pectin and boil, stirring constantly, for 3 to 5 minutes, or until the preserves set (see Notes).
4. Pour the preserves into sterilized jars (see Notes), or to freeze, into plastic food storage containers. Cover and refrigerate for up to 5 weeks, or freeze for up to 1 year.

Frequently Asked Questions

How do you preserve fresh fruit?

To preserve fruit by freezing it, start with fruit that is ripe and flavorful. Use a knife to remove the peels, seeds, and pits if there are any. Lay the fruit on a baking sheet in an even layer so that no fruit is overlapping. Freeze the tray of fruit for one hour, then transfer the fruit to freezer bags.

Are fruit preserves healthy?

No matter what variety of fruit preserve you choose--orange marmalade, strawberry, apricot, mixed berry, peach, raspberry-cranberry, or even boysenberry--the low-sugar varieties can be a healthy cook's BFF in the kitchen, with just about 8 calories and 1 gram of sugar per teaspoon. Here's how to liven up a variety of meals, far beyond toasted bread.

What is fruit preserve?

Fruit preserves. Fruit preserves are preparations of fruits, vegetables and sugar, often stored in glass jam jars. Many varieties of fruit preserves are made globally, including sweet fruit preserves, such as those made from strawberry or apricot, and savory preserves, such as those made from tomatoes or squash.
