1. I like to make sure my pie dough is prepared before I begin the quiche. Make pie dough the night before because it needs to chill in the refrigerator for at least 2 hours before rolling out and blind baking (next step).
2. Preheat oven to 375°F (190°C). Partially blind bake your pie crust. Follow blind baking instructions through step 9 in your 9-inch pie dish. Step 4 is optional, though that step guarantees thick pie crust edges. Crust can still be warm when you pour in the filling. (You can partially pre-bake the crust up to 3 days ahead of time. Cover cooled crust tightly and refrigerate until ready to fill.)
3. Reduce oven temperature to 350°F (177°C).
4. In a large bowl with a handheld or stand mixer fitted with a whisk attachment, beat the eggs, whole milk, heavy cream, salt, and pepper together on high speed until completely combined, about 1 minute. Whisk in add-ins.

1. Make the pie crust: Ingredients and directions can be found here - cut the recipe in half. Once the crust is made, slightly flatten the ball of dough into a thick disc, wrap tightly in plastic wrap, and chill in the freezer for 15 minutes. (This is a good time to cook your bacon!)
2. Blind bake the crust: Preheat the oven to 425 degrees. Once the crust has chilled, slowly and gently roll it out on a floured surface. Be gentle, and turn the dough consistently to avoid it cracking or sticking to the counter. Gently roll the crust around your rolling pin and transfer to an un-greased 9 or 10 inch pie dish. Gently press into the pan. Trim excess dough, leaving 1/2 inch all the way around to crimp the edges if desired (see photos in post above). Gently press a large piece of foil into the well of the pie pan, making sure the edges of the crust are well covered. Bake for 10 minutes.
3. Make the filling: While the pie crust is blind baking, mix up the filling. In a large mixing bowl, whisk together the eggs, milk, heavy cream, garlic, salt, pepper, spinach, cheese, and cooked bacon.
4. Bake: Once the pie crust is done blind baking, remove it from the oven and remove the foil. Reduce oven temp to 400 degrees F. Pour the filling in and sort of evenly spread it around so that all the spinach, etc. isn't in a big clump. Cover the edges of the crust with foil to prevent burning. Bake the quiche for 40-45 minutes, or until the filling is set (doesn't jiggle when you move the pie dish) and the top is slightly browned. (See note)

1. Preheat the oven to 375 degrees Fahrenheit.
2. In a medium bowl, mix the all-purpose flour, kosher salt, and baking powder. Slice the butter into pieces, then cut it into the flour mixture using a pastry blender until a coarse meal texture is obtained. Sprinkle the ice water over the flour 1 tablespoon at a time, mixing gradually with fork until the dough sticks together. Add additional water by the tablespoon until the dough comes together but is not sticky. Form the dough into a ball.
3. If you have a pastry cloth, set it up and dust it with flour; otherwise, flour a clean work surface. Put on a rolling pin cover (optional), and either way, dust the pin in flour. Roll the dough to an even 12-inch circle (which corresponds to the 9-inch pie pan). Use a rolling pin to transfer the dough to the pie pan (make sure it is standard and not deep dish). Fold the overhanging dough backwards and seal it to form a rim. Then press it with the tines of a fork to decorate the edges (see the photos). Use a fork to gently prick holes in the bottom and sides of the crust (this helps it to not puff up while blind baking).
4. Freeze the crust for 10 minutes before blind baking. (Or, you can wrap it in plastic wrap and freeze for up to 1 month.)

Can I bake a quiche without a crust?

So, you can without problem cook your quiche without first blind-baking the crust. The difference will be in the crispness of the crust: if you try to get it crispy, you should prebake, if you don't mind it being rather, well, “plain”, you don't.
