1. First, shell the beans from the fava pods (I found it’s sometimes easier - especially if you're new to fava beans - to open the pods when you run the edge of a knife along the seam, cutting away the tough edge so that the pod halves come apart).
2. In a large saucepan, bring water to a boil, then add salt – the amount depends on how much water you have, but it should be very salty, like seawater.
3. In a bowl, combine ice and tap water to make ice water; set aside.
4. Add the shelled beans to the boiling water and let cook for about 3 minutes, then remove from saucepan and immediately plunge into the ice water to halt the cooking.

1. Combine all ingredients in Instant Pot in order given. Do not stir.Note: the reason we don’t stir this is because tomatoes can often give you the dreaded “Burn” notice. Also, we want to make sure that the beans are submerged in the vegetable broth.
2. Close and lock the lid, ensuring that the Pressure Valve is in the Sealing position.
3. Select the bean/chili mode and set cooking time for 22 minutes. Note; It will take about 10 minutes to come to pressure and for the Float Valve to seal. Then it will start counting down the cooking time.
4. When cooking time is complete, allow a Full Natural Pressure Release (NPR). That means leave the Pressure Valve in the Sealing position and waiting for the Float Valve to drop on its own. This takes about 30 minutes.

1. To prepare the fava beans for cooking, remove them from their large outer pods. Bring a large pot of water to a rolling boil, and fill a large bowl with ice water. Blanch the beans in the boiling water for one to two minutes, until they slip fairly readily from their skins. Transfer the beans with a skimmer or slotted spoon to the ice water. When they’re cool, drain the water and remove the beans from their whitish skins.
2. To make the puree, heat the ½ cup of olive oil in a medium pot over medium heat. Add the shelled, skinned beans, garlic, herbs, water, and a good couple of pinches of salt and pepper. Simmer, stirring occasionally, until the beans are very tender (about 15 minutes), adjusting the heat as necessary to prevent burning, and adding more water if necessary. Remove the pot from the heat, and remove the herb sprig. Mash the beans with the back of a spoon or pass the mixture through a food mill.
3. Stir in the ¼ cup of extra virgin olive oil and a bit of water if necessary to achieve a nice, thick but spreadable consistency, along with a squeeze of lemon juice and a bit of grated zest, if desired. Season with salt and pepper to taste. Serve with toasted baguette slices.

1. Wash your fava beans of choice. You can leave small tender fava bean pods whole (finger size or smaller), or shell them and pickle the individual beans only. I recommend peeling the skin off each individual bean only if they are large and tough. Otherwise, feel free to leave the skins on!
2. Add the fresh dill, lightly crushed cloves of garlic, and peppercorns to the bottom of a clean quart jar. [ If you'd like to add a hot chili pepper (e.g. jalepeno) for some spice, or optional grape, horseradish, oak, or black tea leaves to retain a more firm texture, do so now. ]
3. Pack the prepared fava beans into the jar, trying to fit as many as possible and reduce empty air space.
4. Prepare the pickling brine by combining the vinegar, water, sugar, and salt in a saucepan on the stove. Add optional an optional pinch of celery seed and/or red chili flakes now. Heat lightly until the sugar and salt dissolve, but then allow the brine to cool slightly before adding to the fava beans.

Frequently Asked Questions

What is good substitute for fava beans?

If you’re looking at making a fresh fava bean recipe outside of spring, your best bet is to use frozen fava beans or use fresh/frozen lima beans as a substitute. Dried fava beans, when cooked and peeled, have a texture similar to cooked chickpeas but slightly softer.

What to do with dried fava beans?

There are two ways to soak dried fava beans - either with an overnight soak, or with a shorter "quick soak.". OVERNIGHT SOAK - in a large pot or bowl, combine the fava beans with water at a ratio of 10 cups of water per pound of dried beans. Soak overnight. QUICK SOAK - you will need 1 hour.

Where to get fava beans?

Fresh fava beans are available in spring and summer, and can be found at natural food markets, well-stocked grocery stores, and farmers' markets.
