2. Heat a 6-inch crêpe pan or nonstick skillet and rub with a little butter. Add 2 tablespoons of the batter and tilt the skillet to distribute the batter evenly, pouring any excess batter back into the bowl. Cook over moderately high heat until the edges of the crêpe curl up and start to brown, 45 seconds. Flip the crêpe and cook for 10 seconds longer, until a few brown spots appear on the bottom. Tap the crêpe out onto a baking sheet . Repeat with the remaining batter to make 12 crêpes, buttering the skillet a few times as necessary.
3. In a mini food processor, blend the 6 tablespoons of butter with 1/4 cup of the sugar and the orange zest. With the machine on, gradually add the orange juice until incorporated.
4. Preheat the broiler. Butter a large rimmed baking sheet and sprinkle lightly with sugar. Place 2 rounded teaspoons of the orange butter in the center of each crêpe. Fold the crêpes in half and in half again to form triangles; arrange on the prepared baking sheet, pointing them in the same direction and overlapping slightly. Sprinkle with the remaining 2 tablespoons of sugar and broil on the middle shelf of the oven until they begin to caramelize, about 2 minutes. Using a long spatula, transfer the crêpes to a heatproof platter.

1. Put the almond milk, flour, salt, baking powder, eggs, and olive oil into a large blender and mix. Then push down sides of blender with spatula, add the sugar and bourbon ( or rum) and mix again.
2. Cook your crepes using a crepe pan. Set your stove-top to low-medium heat and then put a small amount of oil on the crepe pan and spread it around. Then add some batter. The amount of batter you need depends on size of pan. Start by adding a large spoonful of the batter to the center of the pan and spread it out in the pan by physically moving the pan from side to side in a circle. The batter needs to coat the whole pan in a thin layer.
3. Cook the crepe over low-medium heat and flip with a crepe spatula when you see bubbles or you see the crepe has hardened a bit on the sides. Once flipped, they only need to cook for another 30 seconds or so. Note, you may need to adjust the temperature based on your stovetop.
4. Put the cooked crepes on a plate. Stack the crepes on top of each other as you make them.

2. In a large mixing bowl, add flour of your choice - I recommend all-purpose wheat or spelt flour for best results. Whisk few seconds to remove any big lumps. You don't need to sift the flour.
3. Add vanilla, sugar, avocado oil, and soy milk (all at room temperature).
4. Whisk vigorously until the crepe batter forms, with no lumps. It is ok to have a few small lumps at the end for a crepe recipe. If you really don't like these lumps, use an electric beater to get a smoother batter. The batter should be slightly thick but runnier than a pancake batter.

To make the crêpe batter: Combine all the ingredients (except water) in a blender, and blend until smooth., Cover the batter and let it rest in the refrigerator for at least 2 hours, or overnight., When you're ready to make crêpes, thin the batter with water, using less water for thicker crêpes and more water for thinner ones., Preheat a crêpe pan or non-stick skillet over medium-high heat.
2. Lightly grease the pan with butter, oil, or pan spray, then pour in enough batter to thinly coat the bottom of the pan; swirling the pan as you pour the batter will help ensure an even coating., Cook the crêpe for 1 to 2 minutes on the first side, until it's golden and lifts from the pan easily., Flip the crêpe over and cook for another 1 to 2 minutes on the other side., Transfer the cooked crêpes to a plate, stacking them on top of one another, and keeping a towel over them., Fill the finished crêpes as desired (we particularly like blue cheese, apple, walnuts, and honey in these crêpes); serve warm.

1. Add all the ingredients into a blender and blend at high speed until creamy and smooth. You may have to stop the blender, scrape down the side of the jug as some flour may pulse on the sides, and repeat blending until smooth. Overall it shouldn't take more than 45 seconds to create a smooth keto crepe batter.
2. Pour the batter into a mixing bowl rest for 5 minutes.
3. Heat a non-stick 10-inch crepe pan - I used a Tefal French Crepe pan - under medium heat. Rub the pan's surface with a piece of absorbent paper covered with a teaspoon of coconut oil or grass-fed butter. Don't leave too much oil on the pan, or you will fry the crepes.
4. Pour 1/3 cup of batter into the pan, then tip and rotate the pan fast to spread the batter as thinly as possible and cover the entire pan. It takes a bit of time and practice. Watch my picture above in the post to see the angle I give to the pan to spread the batter evenly. If your batter is too thick and doesn't spread well, that is ok. Stir in 1 or 2 extra tablespoons of almond milk in the batter to thin it out.

1. In a blender, combine the flour, sugar (I suggest using 1 tablespoon for savory crepes and 2 tablespoons for sweet crepes), salt, milk and eggs. Blend until smooth. Scrape the sides and add the melted butter. Blend again until smooth, scraping the sides as needed to incorporate all the flour. Refrigerate the batter for 30 minutes, or overnight.
2. Pour the vegetable oil into a 10-inch nonstick skillet over low heat. Let the pan preheat for 5 minutes (this will ensure that the crepes brown evenly). Take the crepe batter out of the fridge and give it a whisk (or you can re-blend it).
3. Once the pan is preheated, increase the heat to medium. Using a paper towel, rub the oil over the bottom of the pan (wipe out any excess oil). Pour in 1/3 cup of the batter and immediately swirl the pan to evenly coat the bottom (check out the video above to see how it's done!).
4. Cook the crepe until the edges are browned and the bottom is golden, about 30-60 seconds. Using a spatula, loosen the edge of the crêpe, then use your fingers to flip it over. Cook until golden on the other side, about 15 seconds.

1. Process all ingredients in your food processor or just whisk them together in a bowl
2. Heat a non-stick pan/skillet (I used a 10-inch ceramic skillet) with some oil over medium heat
3. Pour about 1/4 cup of the batter into the pan, swirl the batter around to coat the pan evenly. Cook for about 2-4 minutes or until you can easily lift a side of the crepe (don't try to flip the crepe too early). After you carefully flipped the crepe, cook for a further 1-2 minutes
4. After a while, the batter will get thicker (because of the ground flax seeds), just add a little bit more plant milk

2. In a bowl: Sift together the flours and salt. Add the eggs, ghee, and 1/4 cup of the milk and whisk to form a smooth, thick batter. Gradually whisk in the remaining milk.
3. Pour the batter into a 2-cup measuring cup and stick a spoon in there to stir the batter frequently since the flour likes to sink to the bottom. To cook the crepes, you'll want the following: a ¼ cup measuring cup set on a small plate to catch drips, a small metal spatula, a plate to stack the finished crepes on, some ghee for the pan, paper towel for wiping the pan.
4. Heat an 8-inch crepe pan or skillet over medium heat until very hot but not smoking, 2-3 minutes. Add a small pat of ghee to the pan and use a scrunched up paper towel to wipe it around the pan; you just want a super-thin layer of ghee to prevent sticking, but not so much that the batter slips and slides all over the place when you swirl it around the pan.

Add about 1/4 cup of batter to the pan and rotate the pan around to spread the batter in an …
