Flatten the tops of the dough slightly and bake until the tops of the cookies begin to crack slightly, about 14 minutes. Cool for 5 minutes. Transfer the cookies to a wire rack to cool completely, about 20 minutes.
3. Filling: In a medium bowl, using an electric mixer, beat the cream cheese and vanilla together until fluffy. Gradually add the powdered sugar and mix until smooth. Color the frosting by mixing in the food coloring, 1 drop of at a time, until the desired color is reached. Add water, if needed, 1/2 teaspoon at a time, to make the consistency spreadable.
4. Spread the frosting on the flat side of half of the cookies and put the remaining cookies on top. Refrigerate for 30 minutes to allow the filling to stiffen slightly. Serve at room temperature.

It's important to watch it closely or it will burn, but browning the butter is what makes the dough so delicious. See this tutorial if you're not quite sure what to look for. Allow butter to cool before moving on to the next step or your chocolate chips may melt a little. You can put it in the fridge if you're in a hurry.
2. Add almond flour, honey/maple syrup, vanilla, browned butter and sea salt to a food processor and mix thoroughly. If you don't have a food processor, add all dry ingredients to a bowl and mix, then add wet ingredient and mix again. I prefer the food processor because the dough is a little more smooth.
3. Stir chocolate chips into the dough. This step takes a little elbow grease.
4. On a cookie sheet lined with lightly oil waxed paper, press dough flat into two separate, equal-sized rectangles. Place cookie sheet in the freezer and allow to harden for at least 5 hours. If you can't fit the cookie sheet in the freezer, you can just lay cookie dough layers on the flattest surface you can find in the freezer. It doesn't matter if it's perfectly flat, because the dough will be moldable when it's ready for use. (Kind of like modeling clay)

4. In the meantime, prepare the filling. In a small bowl, whisk together all of the ingredients for the filling until smooth. We recommend starting with 1 teaspoon of lemon juice (if using) and adding more as desired. Taste and adjust the sweetness from the sugar or the tang from the lemon, to taste. Transfer this mixture into a (sealed) piping bag and place that bag into the refrigerator to chill.
