1. Kick the tires and light the fires and pre-heat your oven to 375 degrees
2. Melt your butter then add in the vanilla, egg, cream and brown sugar.
3. Mix in the raisins.
4. Put your tart shells, still frozen, on the tray and fill a good ¾ of the way. I say still frozen because I have found when they are defrosted the filling leaks through the pasty, not ruining them, but making them softer. A good frozen tart shell will hold the contents in, and cook at the same time.

1. Make the pastry: In a large bowl, combine the flour and salt. Use a pastry blender to cut in the butter and lard until the mixture is in very fine crumbs. In a 1-cup measuring cup, use a small whisk or fork to combine the egg yolk, lemon juice and enough ice water to come to ⅓ cup. Gradually drizzle over the flour mixture, stirring briskly with a fork until the pastry holds together. You may need to add a little more ice water to gather up the last of the dry bits. Press into a disc, and wrap and chill until firm. Let stand at room temperature to soften a little before rolling.
2. : Make the filling: Preheat the oven to 450°. In a medium bowl, mix together the sugar, syrup, egg, butter, vanilla, lemon juice and salt until smooth.
3. On a floured surface, roll out pastry to a ⅛-inch thickness. Using a 4-inch round cookie cutter, cut out 12 circles, rerolling scraps if necessary. Fit into muffin cups. Divide the currants among the pastry shells. Spoon the filling over the currants until three-quarters full.
4. Bake in the bottom third of the oven for about 12 minutes, or until filling is puffed and bubbly and pastry is golden. Let stand on a rack for a minute; immediately run a metal spatula around tarts to loosen. Carefully slide the spatula under the tarts and lift out to cool on a rack. The baker gets to eat all the tarts that break in transit, or give them as a reward to favourite people.

1. Mix together flour, sugar and salt in the bowl of a large food processor. Cut cannabutter and butter into small chunks, add to food processor and pulse 8 to 10 times until butter is incorporated. Add in ice water, a few tablespoons at a time, until the dough just holds together, do not over mix. Gather dough and shape into a disk, wrap in plastic wrap and chill for at least an hour before proceeding.
2. Roll out chilled dough on a lightly floured surface (or between two sheets of plastic wrap) to about 1/3-inch thickness. Use the bottom of a glass to cut out 12 rounds a little large in circumference than the size of a muffin tin cup. Gather scraps and re-roll as needed, trying to use up all the dough. Press the dough circles into the bottom and up the sides of 12 muffins tin cups. Chill for at least 30 minutes.
3. While crusts are chilling, preheat oven to 400°F. Prepare filling by stirring together the brown sugar and melted butter until well combined. Mix in the maple syrup, eggs, cider vinegar and extract. Beat well so mixture stays emulsified and divide the filling between the prepared chilled crusts, filling them to about 1/4-inch from the top.
4. Bake for 10 minutes, reduce temperature to 350 and bake until pastry is golden brown and filling is starting to set, about 10-12 more minutes. Let cool completely before removing tarts from the muffin tin and serving.

Award-Winning Butter Tarts. In a small bowl, place raisins and cover with hot tap water; let stand on the counter for 30 minutes. In a large bowl, using a wooden spoon, mix together the soft butter, brown sugar, salt and corn syrup; stir well until sugar is dissolved and butter is creamed. Add egg and vanilla and mix well.

What is the best way to make a butter tart filling?

Whisk sugar, corn syrup and butter in a bowl by hand until combined. Whisk in eggs, then vinegar and vanilla. Sprinkle a few raisins in the bottom of each muffin cup and pour filling over the raisins. Bake the tarts for 5 minutes, then reduce oven to 375 °F and continue baking until butter tart filling starts to dome, about 20 more minutes.

Is this butter tart authentic Canadian food?

It’s one of the few authentically Canadian recipes that exist on paper. (source: Food Network Canada and Food Blogger of Canada) Whether a true butter tart has a runny or firm filling, plain or with raisins, is a matter of passionate national debate. For me, it’s a matter of personal preference with no right or wrong.

How long do you cook butter tarts at 400?

Retrieve tart shells and divide raisins equally into all shells; then divide butter mixture into all tarts. Bake at 400F for 15-20 minutes; filling will be lightly browned but still bubbling. Canadians fall into two camps about butter tarts and are quite loyal to their favourite type: runny or firm.
