In a 6 quart slow cooker place the fat side down of the Boston butt. Add quartered onion and cloves of garlic to the slow cooker. Sprinkle salt and pepper on top of the meet and pour a 12oz bottle of beer over everything. Place the lid on the slow cooker and cook on low for 10 hours.
Set the Boston butt on the center of the baking sheet, with the fat side up. Measure 2 tbsp. of olive oil and lightly drizzle the roast with olive oil. Rub the oil into the roast with your hands. Sprinkle a liberal amount of salt and pepper over the top of the roast to season. Insert the roast into the preheated oven and cook 30 minutes.
Smoking a Boston Butt low and slow produces the most delectable results, but this takes a lot longer than you think. Smoking the meat at about 225-250 degrees takes between 1.5 and 2 hours per pound of uncooked meat. So if you have a 7 pound uncooked Boston Butt, it could take up to 14 hours to be done.
Directions Preheat oven to 250 degrees F. Place roast in deep roasting pan and salt and pepper to taste. Rub entire roast with worcestershire sauce, then with Emeril's. Southwest Seasoning. Cover tightly with foil and bake for 7 to 8 hours. Bone should pull out easily when done. Cool pan drippings and skim off fat. Place on stove on medium heat.
