Any cookie dough with a lot of butter or fat. Drop cookies are best. Shortbread also freezes beautifully. Icebox cookie dough is great. Delicate doughs don’t hold up well in the freezer– avoid freezing French macaron, pizzelle, or madeleine cookie doughs.
