Braciole is best made from thin slices of beef rump, top round, or bottom round. Pork cutlets can be substituted for the beef in this dish. The individual slices are stuffed, rolled, tied, and braised in a combination of wine, stock, and tomatoes.
Directions Prepare the bread stuffing by soaking the bread in milk for 5 minutes. Set the veal on a piece of plastic wrap. Heat olive oil over medium heat in a Dutch oven or roasting pan. Alternatively, deglaze with red wine, then pour tomato sauce on top to cover the braciole.
The most common meats used in braciole are veal, pork and beef top round. However, as the term braciole mainly refers to the dish construction (rolled, stuffed meat cooked in sauce), chefs took many liberties with the dish, making braciole with almost any kind of meat.
Directions Place beef between two pieces of plastic wrap. Pound gently with a meat pounder or mallet to 1/4-1/8 inch thickness. Remove and discard plastic wrap. Place one slice of the prosciutto on each beef slice. Heat the olive oil in a large pot. Add the braciole and crushed garlic. Stir in the tomato puree and basil.
