Move the roast to the other side of your grill, away from the flames and cover. Allow the roast to cook for roughly 20 to 30 minutes per pound, turning it every 30 minutes to ensure even cooking.
Preheat oven to 325 degrees F (165 degrees C). Heat a heavy Dutch oven on top of the stove over medium high heat. Add oil, and sear meat in the center of the pan for 4 minutes. Cook in the oven for 30 minutes at 325 degrees F (165 degrees C). Reduce the heat to 300 degrees F (150 degrees C), and cook for 1 1/2 hours.
