How to make Baked Cannoli with Pie Dough. Make the pie dough of choice. Roll out the dough very thin, about the same thickness as a pie. Cut long strips approximately 6-8 inches. Lightly grease the cylinders. Wrap the dough around the cylinders (or make your own cylinders by rolling up aluminum foil). Bake for approximately 20 minutes.
Whisk 1 egg together in a bowl and set aside. Wrap each rolled out dough round around a metal cannoli cylinder and rub a little whisked egg onto the end of the cannoli dough and wrap the other end over top and gently press to secure. Repeat until all of the cannoli shells are prepped. Fry in oil at 350° for 1 to 2 minutes or until browned.
Cold butter will help give your shells layers ensuring the shells are crispy and flaky! After making your dough let it chill until that butter is nice and cold again before rolling them out, at least 1 hour, but longer is better. Having your oil at the right temp, in this case 360°, is crucial.
